When I read this recipe, I decided it should be the main course instead of an appetizer or side. I followed the recipe exactly and was given very positive comments. This is a large quantity of food. Be prepared to freeze leftovers.

Jamaican Burgers

I believe this recipe could make T-Rex less of a carnivore. I made this exactly as stated and cannot think of any alterations to make. I used a 3"x1/2" round cutter to form "burgers" and served it as a sandwich burger with the typical condiments. Using the cutter, I had ten servings and put the leftovers in the freezer for another time.

Pizza Crust Fantastico

I,too, was compelled to add 1 cup more of flour while the mixture was in the bowl. I added small dustings of flour during the kneading process. As for flavor, this recipe is clearly a five star. I made a thin crust pizza and the crust was crunchy yet easy to bite. Because my sauce has all the herbs in this recipe, I did not add them. Instead, I added Spanish Cracked Anise. (Penzy's.com) After making the pizza crust, I had more than half the recipe remaining. Because of the quantity yeast, I let it rise in a breadpan and baked it as a loaf of bread.(30 min @ 350 degrees.) It turned out a beautiful loaf that is light to eat and very flavorful. Made great toast with butter. I intend to use it for Garlic bread, Bruchetta and croutons.

Carne Asada Marinade

This is a very neat marinade in its simplicity. Really good as it is or to build upon. I used a stovetop grill on the grates of my outdoor grill because I was afraid of flare up from the olive oil. It stii had thad grilled taste I love.

I am not much of a fan of seafood but recent dietary changes made me explore it. This recipe may convert me to being more of a seafood eater. I made this as presented and then a second time with my tweaks. Either are very good.

My mother's recipe for corn relish had been lost. I had always enjoyed it. If this recipe isn't the one she used it is a very close one. Great balance of flavor with modest sweet and sour.

Ginger-Spiced Cucumbers

An excellent blend of flavors. I believe the secret of this recipe is the very thin slicing of the cukes and onion and careful grating of the ginger. I used the recipe as a side and it was well received but the best raves came from using the recipe as a condiment for submarine sandwiches- I had to make more.

Truck-Stop Buttermilk Pancakes

Very tasty recipe. We use it as an evening meal with fruit and vanilla yogurt. 01/0t7/13 Made this again- at last! The recipe is still tops. This time, I served it over mashed potatoes and had Hawaiian Cole Slaw on the side.

Berry Burst Sorbet

This is a very good combination of flavors. Being a Splenda user, I believed the 1 cup quantity was too much so I cut it back to 1/2 cup. For my taste, that seemed about right. The second time I made this, I used 1 cup vanilla yogurt and that is awesome! Thank you for this recipe, Pamela.
