Cranberry Orange Loaf
This is a great-tasting quickbread! I doubled the recipe, added almonds instead of pecans because it's what I had on hand, and followed another's suggestion of chopping the cranberries. I used one loaf pan and one pan with 6 mini loaves...those finished first, in about 1/2 hour, and the larger loaf was done in about 40 minutes. I also did what some did and drizzled orange juice/powdered sugar/vanilla on top....delicious!!

Venison and Wild Rice Stuffed Acorn Squash
I LOVE this unique recipe! Just made it for the first time. I used elk since the local butcher had ground elk and not venison...I diced an onion and sauteed that in a little oil before adding the elk, I used a wild rice mix, and I doubled the recipe (but left the brown sugar and cinnamon amounts alone, effectively halving them). Last night, I made the acorn squash according to directions, but tonight I actually cut it into fourths and roasted it cut-side up with some olive oil and salt and pepper. I thought that way was much better. Overall, it's just such an awesome mix of flavors, and not too sweet when the brown sugar is cut in half. I will be making this again for SURE.

Mom's Casserole
I made this last night and followed the reviews of others...used a 29oz. can of tomato sauce, ended up using almost a lb. of ground sirloin and 1.25lb of ground turkey (I had the sirloin already), about 12 oz. sour cream, and mixed the cheese mixture with the noodles before putting together the casserole. I thought it was a delicious, easy meal and we're freezing the rest (we have a baby coming any day!).
