About this Cook
I mostly cook for my family and friends. I have only been cooking for a few years on my own but I already have family and friends requesting food for parties and such. I love to be creative when I cook. I am pretty good at making nothing into something when we are low on money!
My favorite things to cook
Most of mine and my husband's family is Italian so, of course, I love to cook Italian food! Pastas, Sauces, and italian cookies and desserts are among my most requested recipes. Occasionally I like to dab into some Mexican or Asian inspired foods. I like to just kind of throw things together. People say they love the different ways I make well known foods. Like when I put sausage, spinach, mushrooms and zucchini in my lasagna when alot of people just use hamburger and cheese. Or when I make cookies with whatever ingredients I have lying around. You end up with combos you'd never think of, but they work really well together!
My favorite family cooking traditions
My biggest cooking (and everything else) influence was my Grandmother, who showed me lots of Jewish recipes. So when i'm not cooking Italian for family get togethers, I like to make things like Matzo Ball soup and Potato Pancakes (Latkes). My dad says he taught me how to make my husband's favorite apple pie, but I just always figured I made it up! I think he just wants to take credit, LOL!
My cooking triumphs
Last year for Christmas I made a basket for each family with pasta, sauce, breadsticks, and biscotti, all homemade. I got a lot of thanks for that one and a couple people even requested the same present this year!
My cooking tragedies
There hasn't been too many yet, knock on wood, but I do remember accidently ommiting baking powder when baking cookies. Hockey pucks anyone?

Chicken Breasts in Caper Cream Sauce
This recipe is now a regular in our house. Usually I make it with thin pork chops, double the sauce and serve with linguine or other pasta. I do find the sauce a bit bland as written though so I add more dill and a little extra s&p to it to bring the flavors through. I also sometimes substitute chopped green olives for the capers (no extra spices). I never would have thought of it had i not been making this and realized i'd run out of capers! Now my family asks for 'that olive cream sauce'. Thanks!

Perfect Sesame Chicken
This came out really well! I was surprised at how well the breading on the chicken came out. I tripled the recipe for a larger family, and cause I had a lot of chicken to use up. I had only a couple pieces of chicken left for my lunch the next day! I tripled EVERYTHING. If you do that, you do NOT need to triple the sauce. Maybe 1 1/2 times. I have a big chinese food restaurant container left in my fridge. My husband said it wasn't exactly like restaurant style but it was very good. I think the only thing I did differently was I didn't have chlli paste so I used a chili sauce. It worked fine though. Thanks!

Pork Chalupas
Family liked it, but way too much salt for us. I hesitated to put the 2 T but thought maybe I was just being conservative. Next time I would reduce by half at least. We also used less peppers and used dried black beans instead of pinto because that's what I had on hand. The meat and beans came out very well. This does make ALOT! 4 adults eating and enough leftovers for a casserole the next day! We will make it again.
