Carrot Souffle

Reviewed: Jan. 19, 2007
This receipe can be made diet friendly by substituting the sugar with 1/4 Cup Splenda Sugar Blend for Baking, and the stick of butter with 1/2 cup of apple sauce. It works great, and saves a lot of calories.

Zucchini Bread IV

This was a very easy & good receipe, and freezes well. I served it to company twice, and everyone liked it. A good way to use up some of that summer zucchini.

Cannoli Cake Roll

Reviewed: Feb. 8, 2002
This cake is easier to make than when you first look at the recipe. I took it to a party and everyone enjoyed it. They were pleasantly surprised that it was too sweet, because it looks so rich. It make a nice presentation.

Anise Biscotti

Reviewed: Aug. 30, 2011
You have to bake the cookies 3 times, which makes it a little time consuming, but it's worth it for what you get. I made this just as the recipe states, and it was perfect. I brought them to my Women's Club welcome tea, and one of the ladies was stuffing her pocketbook with them. She called me the next day to say how wonderful they were, and how much she was enjoying them. At first I could not find anise seeds, but a new up scale grocery store opened, and they carried them.

It isn't worth making. We thought it had a funny texture. Just alot of useless calories for what you get.

All Day Macaroni and Cheese

Reviewed: Apr. 18, 2001
A very easy dish to prepare, and liked by all. A few tips: It comes out great if you only half cook the pasta to begin with; add 1/4 to 1/2 cup more milk; use finely shredded cheese. These things help not to make it mushy or dried out.

Albondigas Soup I

Reviewed: May 30, 2000
We enjoyed this soup with some friends, and everyone liked it. You can control how hot the soup is buy using a mild, medium, or hot salsa. I used medium, and that was just enough for me.

Pesto Torta (Layered Spread)

Reviewed: Oct. 13, 2007
I've made this recipe for two groups, and it was a great success. I cut up the red peppers, and put some in each layer, and a heavy layer right on top. It makes a very nice presentation, surrounded by sliced Italian bread. I used my own homemade pesto, which I think adds a great deal.

Mock Chopped Liver

Reviewed: Feb. 7, 2007
I love this recipe. I made it for our Super Bowl Party. As we are getting up there in age, everyone is worried about their health, and this won't clog your arteries. It tastes great, if you like chopped liver.

Coconut Cake I

Reviewed: Feb. 8, 2002
My husband loved this. I cut out a half cup of sugar because one of the other reviews said it was too sweet. I think this worked fine, because I had to smile when my husband said it was great and not too sweet.

Slow Cooker Chicken Cacciatore

Reviewed: Dec. 3, 2000
This recipe is a big hit with my husband, so it is a big hit we me. It made so much extra sauce that I froze the sauce, and the next time I made it all I had to do was put the chicken in the crock pot, and pour the sauce on top. I only things I would like to correct is that the sauce is very loose, no thickness to it. Thanks, Jessica

Country-Style Steak

I made this last night for a couple of friends that are wonderful cooks. They enjoyed the meal, and wanted the recipe. It was very good, but the reason I gave it 5 stars is because it is so easy. I may try this in the crock pot.
