Emily's Famous Apple Pie

I add 1/2 tsp ginger, a dash of allspice, and mix the filling instead of layering it. The end result is SOOOOO tasty! This pie is super-easy to make and gets rave reviews every time.

Fajitas Primavera

Delicious!! We had a couple of people over the first time I made this. Everyone loved it - and I love finding creative uses for canned vegetables! Inexpensive, easy to make, healthy and super tasty. Thank you for a fabulous recipe.

Hot Dog Casserole

This is a pretty good kid-friendly recipe. My daughter liked it, but I thought it was a little bland. Next time, I think I'll season it a bit and use beef hot dogs instead of chicken to improve the flavor. Also, the liquid didn't thicken very much, but that may have been because I used petite diced tomatoes instead of stewed.

Ranch Ham Roll-Ups

These are yummy! I used chive and onion cream cheese and omitted the green onions, per another reviewer's recommendation. Easy, versatile, inexpensive, and very attractive on a party platter! I think I might try the turkey-and-taco-seasoning idea next.

Marinated Baked Pork Chops

My family loves garlic, so I added about 1 1/2 tablespoons minced garlic to a doubled recipe. I also pierced the chops with a fork and marinated them for about half an hour before baking. My daughter INHALED two chops and asked for more! This is a great recipe, and budget-friendly to boot. Thanks!

Classic Peanut Butter Cookies

These cookies are fabulous! Per other reviewers' recommendations, I increased the flour to 2 3/4 cups and peanut butter to 1 1/2 cups. I also used creamy instead of crunchy peanut butter to suit my family's tastes. The cookies came out beautifully - thick, soft and floury, not either crunchy or grease-moist like other recipes I've tried. They also didn't get crunchy around the edges after cooling, but stayed uniformly soft and chewy. I have made these several times, and they never last more than a day - my husband loves them! Thanks for a real keeper of a recipe!
