Pepperoni Penne

I used half regular pepperoni and half turkey pepperoni-- that way the pepperoni produced just enough grease without need of draining. The spicy tomato cream sauce tasted gourmet, but I love how economical this recipe is!

Southern Style Holiday Greens

This was my first time cooking southern greens, and I used 6 bunches fresh collards with all the same seasonings, except I used jalapeño juice instead of pickle juice. Excellent!!

Texas Hurricane

Perfect hurricane! Just like we remember from the beach, only stronger :) We didn't want to buy special hurricane glasses, so one-half recipe fit nicely in a standard wine glass. I'm a 150 lb woman, and after 2 wine glasses (1 recipe) I was silly drunk! I had a third wine glass, which caused a mild hangover the next morning, so I told my husband to stop me at 2 wine glasses next time. This recipe has a fantastic kick:alcohol-taste ratio, and for the second batch I enjoyed adding another 1/2 ounce each of the flavored liqueurs to make it even smoother. ATTENTION anyone who hates even the slightest taste of alcohol: this recipe is not for you! Stick to the recipes which have a higher juice:liquor ratio, and leave this recipe for the grown-ups! ;)

Banana Banana Bread

I have made these every month for about three years, and I like these best as muffins (bake 25 min for standard sized muffins). Even my mother, who has always prided herself on baking fantastic banana muffins, gave in and asked me for this recipe because mine are even better! I add 4oz crushed pecans and 1 tsp cinnamon, and when I want to use them as a fast breakfast I substitute half of the flour with whole wheat flour.

Chicken Tortilla Soup I

I have been making a double recipe of this, exactly as written, at least once a month for almost a year now. My husband loves it, and the leftovers freeze great!!! I freeze the leftovers in individual serving size containers, and he takes them for lunch to work almost every day. He gets a little tired of it every 3-4 weeks, but then after only one week of different lunches he asks for it again! Even with all my experience making this recipe, I have never felt a need to alter the recipe. However, since chicken breasts are so much more expensive than whole chickens and since when the meat is in a soup even my white-meat-loving husband can't tell the difference, I use a whole chicken when doubling the recipe. I make it easy by putting a 4-5 pound chicken in some water in the crockpot on low for about 6-8 hours (this also makes great broth for the soup!), then when the first ingredients are simmering I strain the fresh broth into the soup and I remove the bones and shred all the chicken to add to the soup. This is easy to do after slow-cooking, even if you're clueless about how to take apart whole chickens, because it's falling off the bones and the pieces don't matter because you're using all the meat anyway. Try this-- it's way cheaper than chicken breasts and the crockpot makes it easy.
