Simple Scones

Reviewed: Dec. 31, 2008
I have made this recipe no less than 30 times, and the results are perfecty every time! I did however change the flavors to suit my family. We use dried cranberries and orange extract, and sometimes a bit of orange rind to flavor them, as most in my family are not fans of raisins. I have also changed out the cranberries for chocolate chips, which with the citrus flavor underneath is a nice and refreshing change! If you need a classic and adjustable scone recipe...this is it!!!

Blackberry Cobbler II

Reviewed: Dec. 31, 2008
I just finished up making this for our New Year's Day celebration tomorrow. This recipe was easy to follow, and the smell that came from my oven was amazing!!! I grabbed a tiny little bite to taste and it is GREAT. The recipe as written originally is awesome, and the only change I made was to add a dash of cinnamon and vanilla extract to the berry mixture. I am sure I will be making this again and again...so easy and such a nice dessert to put out for guests with a little vanilla ice cream!

Chocolate Banana Cream Pie

Reviewed: Nov. 9, 2008
I have made this recipe many times for friends and family and everyone loves it! I too use banana pudding instead of vanilla, but other than that I follow the recipe to a "T". Thanks for sharing!

Cranberry Sauce I

Reviewed: Nov. 9, 2008
I have tried this recipe two different ways, the original as written, and my way...which is half orange juice and half water. I find the orange flavor a bit overwhelming to the tart cranberries when you follow the recipe as written, however it is still very good! I adjusted mine by simply doing half orange juice and half water. This chilled overnight and was perfect for the next day. And here is just a hint that I learned...I have picky eaters who don't necessarily like biting into whole cranberries, so I use a potato masher on about half of the mixture to break up the cranberries and smooth it out. This seems to really help pacify the kids and adults who would prefer the cranberry sauce out of the can with the lines! :) Great recipe as is, but I think better with my revisions ;) Thanks!

Mild Cheesy Chicken Enchiladas

Reviewed: Nov. 9, 2008
This is a great base recipe and jumping off point for a perfect enchilada. I followed another reviewers suggestion and cooked the chicken breast in chicken broth in a slow cooker on low for roughly 4 hours, which allowed me to shred the chicken instead of cube it. Since my boyfriend and I prefer a bit of spice I did add some chopped onions, chili powder, and a bit of cumin for some smokey flavor. I also added about 3-4 tablespoons of medium salsa to the chicken mixture, which really helped moisten the chicken and add a nice stronger flavor. While the cheese sauce topping was extremely tasty, I would say you could cut it in half or cut it out all together and use a red enchilada sauce for a lighter meal. I realllly love cheese, but the cheese in this recipe was even a little tiny bit much for me. In any case, its a great starting point for a recipe, and I highly recommend it. I can also see how the recipe would be perfect for kiddies as written. Thanks for the great recipe!

Easy Sausage Cheese Balls

Reviewed: Nov. 9, 2008
This recipe was easy and tasted great...the perfect appetizer for a chilly afternoon. I used a bit more sausage than the recipe called for, roughly 1/4 to 1/2 lb. more and also added maybe a tablespoon of milf to get the mixture to stick together a bit better. I also sprinkled the tops of the balls with paprika to add a punch of color. Everyone at the party loved them, especially the men! Thanks for a great and easy recipe! :)
