Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Apr. 29, 2010
Delicious!! My husband especially loved it, he told me if they sold this in a restaurant it would be a hit. I used 3 chicken breasts and a 12 oz bottle of Frank's buffalo sauce and it came out perfect. Some people have said that the sauce evaporated or that the chicken was dry, but I didn't have either of these problems using those amounts. It made enough for two sandwiches plus two for tomorrow night, with possibly some left over. I put provolone cheese on the rolls and melted in the oven for 5 minutes before putting on the chicken and some ranch dressing. Yum!

Portuguese Soup

Reviewed: Feb. 7, 2010
Delicious! I went to a restaurant in New Bedford recently and had a soup that I really liked, so I searched online for a recipe and found this. This one turned out even better than the restaurant's! Definitely use the vinegar it gives it that little something extra. It makes a ton of soup so we'll be eating it for a few days, which is fine with us. I said to my husband that if I ever made this for anybody else they would think I was a good cook :)

Whole Wheat Ravioli with Sauteed Garlic Vegetables

Reviewed: Jul. 28, 2009
Delicious!! The veggies were so flavorful, especially the tomatoes - and using the cook time in the recipe they came out perfectly (usually I overcook or undercook them). The one change I made was to use Buitoni meat raviolis instead of cheese. A yummy, healthy, and very importantly QUICK & EASY dinner.

Red Potato Bites

Reviewed: Jan. 3, 2009
These turned out great! It was a little bit of a pain scooping out the insides, but once I did a few I got the hang of it. I used pre-cooked bacon bits rather than cooking bacon. I boiled the potatos longer than ten minutes, maybe more like 14 minutes, but they still could've gone a bit longer. I made about 20 of them and baked half on new year's eve, and put the rest in the fridge to bake the next day. They came out yummy both times.

Spinach and Sun-Dried Tomato Pasta

This was really good, I omitted the pine nuts and added some artichokes. It was just as good reheated the next day. Will definitely make again!

Addictive Sweet Potato Burritos

Reviewed: Nov. 30, 2008
My husband and I both liked this. I think that next time I might mix the potatoes with the bean mixture, that way you don't just get a mouthful of potatoes when you bite into it. I halved everything to make six burritos instead of twelve, but could have used a little more spice. But yummy overall, will make again!

Carrie's Artichoke and Sun-Dried Tomato Pasta

Reviewed: Nov. 18, 2008
This turned out very good, my husband really liked it. Before I made it he said he didn't like sun dried tomatoes, but he ended up cleaning his plate. It is definitely very tasty and different and I found it a good way to use my leftover white wine from the weekend :)

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Nov. 9, 2008
I just made this tonight and it was delicious. I used black beans instead of the black bean soup (since I couldn't find any). I put it in the slow cooker for 2 hours like the recipe said, but the onions and peppers were still crunchy so I'm letting the rest of it cook for a few more hours so that the leftovers will be softer. Otherwise it was great. My husband is a picky eater, especially in regard to beef and chicken, so he loved the beans and the fact that it was vegetarian. I will definitely make this again!
