Apricot Lentil Soup

Jo's Rosemary Bread

SO GOOD! This disappeared within twelve hours of baking! I used a 1.5 tbsp fresh rosemary, trying to find a safe medium in regards to the other reviews, and it was perfect! I also made it completely by hand because I don't have any of that fancy schmancy gadgets.

Hearty Vegetable Lasagna

SO DELICIOUS! I did, however take out the green peppers (not a fan) and add grated carrot, zucchini, italian stewed tomatoes and spinach! The more veggies the better! also simmered the out of all the veggies and sauce. I had tons of sauce left over that was really great on pasta. Score! This was seriously gone in a couple of days.

Mexican Rice II

Pretty delicious! I just needed more of all the spices, though. I also added a can of El Pato instead of some of the (veggie) broth and even some Tapatio just to spice it up. Maybe some cilantro next time at the end would do it justice as well. My boyfriend thought I made it from a box, which seems like a compliment!

Rice with Herbes de Provence

Really great simple dish that is almost scandalously too simple! I used veggie broth and it was just fine, although next time I might take another reviewer's advice and saute some onions and garlic to mix in as well to add some flavor dimension.

French Apple Tart (Tarte de Pommes a la Normande)

Mon Dieu! I really felt like I was eating something from a little French patisserie (and trust me, I ate most of it myself!)! I baked this in an oven which, as it turned out, bakes at 20 degrees lower than it's set to. Despite that, I just kept it in longer, and while the sugar didn't carmelize and the apples were a bit stiff, it was still amaaaazing! The crust is precisely perfect in every way. I can't wait to bake it in an accurate oven!!

Creamy Rice Pudding

I tried coconut milk instead of milk because I was out of regular milk (MAGICAL! It added such a creaminess!), and used sliced dried apricots instead of raisins because I needed to get rid of them. I also added a couple shakes of cinnamon and one shake of nutmeg. Delicious! Soo creamy and luxurious and it made my tummy feel all warm! I had trouble saving some for my boyfriend...
