Schmag Salad
This was a great way to use the grapefruit I had laying around! I did not have orange extract, so I added the juice of ½ orange instead. I also did not have mangoes, pears or jicama. For 3 hearty servings, I used ½ grapefruit for juice, ½ orange for juice, 2 Tbsp. honey, 2 Tbsp. cilantro (the fresh kind in a tube they sell in the produce refrigerated section), ½ grapefruit for chunks, 1 ½ oranges for chunks and 1 red unpeeled apple for chunks. Very refreshing salad that got raves from my dinner crowd! Thanks for recipe.

Spicy Vegan Potato Curry
This was a good recipe, though intensive and took a long time to make for a weeknight (1.5hrs). I think the assembled mixture needs to simmer for more than 5-10 minutes, especially with the huge amount of spices it calls for. It takes longer for everything to meld together. Considering all the substitutions I made, I think it is a foolproof dish that's going to be good no matter what. I made the following substitutions/changes: I used jarred minced garlic instead of fresh, red onion instead of yellow, 1 tsp of cayenne instead of 1.5 tsp, 1 can of tomatoes, okra and corn plus 2 fresh tomatoes instead of canned tomatoes, 3 different beans instead of garbanzo, frozen English peas instead of canned and light coconut milk instead of regular. I did not have garam masala so I found a recipe for it online and combined nutmeg, cinnamon, ginger and cardamon as a substitute. I also added 4 Tbsp. of brown sugar to make it taste more like massaman curry. My husband LOVED it. It made 4 huge servings so we will have it again tomorrow night. Tip: don't forget to get some Naan bread to have on the side! You'll need it to cut all that spice.

Pumpkin Spice Cookie
I made the cookies exactly according to the recipe, but mine were done after 12 minutes and I added cream cheese icing after they cooled a bit. I agree with the others who say these cookies have an odd, spongey, cake-like consistency. It definitely helps both the appearance and the taste to drizzle them with cream cheese icing. The flavor of the cookies is good (I used Duncan-Hines spice cake mix). But I think it is worth it to go to a little more trouble with more ingredients to make a better, more "cookie-like" cookie. I probably wouldn't make these again, but I'm sure my family will enjoy eating this batch, especially with the addition of the icing. UPDATE: the cookies got worse as they cooled down and became more spongey. Not impressed AT ALL. Would not recommend.
