Beaker's Vegetable Barley Soup

This soup is FANTASTIC!!! I made it as directed the first time but made a slight change the second time: I sauteed the vegies in olive oil until the onions were translucent prior to adding the broth and spices (just started adding the veggies to the pot as I chopped them - starting with the onion and ending with the zucchini). Also I used frsh garlic rather than powder, more celery and carrots, 2 zucchini, and used No-Chicken Broth (it's a vegan version of chicken broth) instead of veg broth. This makes a ton but freezes really well and just tastes better the longer it sits. Great recipe!

Savory Spinach Pie

This was good, I used ricotta instead of cottage cheese and added a couple of cloves of garlic to the onions. Other than those two slight changes I followed the recipe exactly and it was a hit at Easter. You can bake this ahead of time as it is just as good at room temperature as it is hot.

Best Big, Fat, Chewy Chocolate Chip Cookie

Seriously good cookie...I used 1 cup milk chocolate chips and 1 cup bittersweet chocolate chips. I also added 1 cup of walnuts. Let the dough sit in the fridge for about an hour before baking. Crunchy on the outside and chewy on the inside...so good!!!!!!!!

Vegetarian Stuffed Peppers

This was a great base recipe. I drained the tofu the night before (using a heavy pan to press all the water out) and then marinated it in vegie stock overnight then cooked the tofu exactly as described in the recipe. I used 1 cup quinoa instead of the rice (and only used half of that when it was cooked). Used yellow, red and orange peppers instead of green. I didn't have tomato sauce so I used a small can of diced tomatoes with a dash of white sugar (maybe 1/4 tsp) and a pinch of basil. I know, lots of samll changes but the technique and base recipe is right on! My other half who doesn't even like peppers ate the whole thing and said we have to have it again! Thanks for the recipe :)

Cinnamon Ice Cream

This is awesome! The only thing I did different was added a vanilla bean to the sugar and half and half during the cooking process....otherwise this was a huge hit at Thanksgiving!

Peanut Butter Noodles

This was really good. I used Barilla One thin spaghetti in place of the udon noodles and made mine vegetarian by using veggie broth in place of the chicken broth. I also added stir fried tofu and vegies....super good and easy dinner!!!!

Chocolate Chip Banana Bread II

Wow! I cut the recipe in 1/2, subbed sour cram for the mayo, butter for the shortening, added 1 tsp vanilla, 1/4 tsp cinnamon to the flour mixture and baked it in 12 muffin tins greased and dusted with cinnamon sugar baked for 25 minutes....Soooo YUMMY!!!! very moist - this ones a keeper!

Blueberry Cream Cheese Pound Cake II

Chocolate Caramel Brownies

These tasted better than they looked. I made them for a aprty and ended up not taking them but wish that I had as I can not stop from eating them at home :) It seems like there's not enough batter to cover the bottom and top layers of the brownies...

Banana Banana Bread

This is the best banana bread recipe I have evedr used. The bread gets a really nice "crust" on the outside because of the brown sugar. I do add a tsp of vanilla to the wet ingrediants and 1/2 tsp of cinnamon to the dry (just because I like I like those flavors in my banana bread) but didn't change anything else. This recipe is a keeper!!!
