Beaker's Vegetable Barley Soup
This soup is FANTASTIC!!! I made it as directed the first time but made a slight change the second time: I sauteed the vegies in olive oil until the onions were translucent prior to adding the broth and spices (just started adding the veggies to the pot as I chopped them - starting with the onion and ending with the zucchini). Also I used frsh garlic rather than powder, more celery and carrots, 2 zucchini, and used No-Chicken Broth (it's a vegan version of chicken broth) instead of veg broth. This makes a ton but freezes really well and just tastes better the longer it sits. Great recipe!

Savory Spinach Pie
This was good, I used ricotta instead of cottage cheese and added a couple of cloves of garlic to the onions. Other than those two slight changes I followed the recipe exactly and it was a hit at Easter. You can bake this ahead of time as it is just as good at room temperature as it is hot.

Best Big, Fat, Chewy Chocolate Chip Cookie
Seriously good cookie...I used 1 cup milk chocolate chips and 1 cup bittersweet chocolate chips. I also added 1 cup of walnuts. Let the dough sit in the fridge for about an hour before baking. Crunchy on the outside and chewy on the inside...so good!!!!!!!!
