Italian Sausage, Peppers, and Onions

Great recipe. Only made two minor changes. I used spicy italian turkey sausage and added some fresh italian parsley. By browning the sausage first and deglazing the pan with the butter, the sauce came out really rich and flavorful.

Tex-Mex Beef and Cheese Enchiladas

Really enjoyed this recipe overall. We substituted 20oz ground turkey for the beef, added an extra 8 oz tomato sauce for some of the water, and used 1 tbsp of cayenne pepper in place of some of the chili powder. This combo was good and very flavorful, but Hot on the spicy scale (for the midwest) maybe a solid medium for those of you who are used to spicy. Next time I would try a tsp of Cayenne.

Ice Cream Cake

I made a Gluten Free version using Life Beyond Wheat Chocolate Cake Mix and Vanilla Ice Cream. I frosted it with a can of whipping cream and decorated with crushed Kinnitoos GF oreos. FYI, I found the cake easy to cut after about 2hr cooling. I was even able to make 3 layers of ice cream by cutting the cake in half (using a thin cutting board to remove the top cake layer) and then cutting it again into more of a square shape.

Barbequed Ribs

My family really liked this. I cut the time in half by doing the rub first and then baking. I refrigerated it for 3-4 hrs and did the rest in time for dinner. So tasty by itself the dipping sauce wasn't needed.
