Peanut Butter Pie I

Reviewed: Oct. 11, 2011
The family loves this desert. I found it simple and fast to prepare, especially using the pre-made crust. The suggestion, however, to melt chocolate chips and line the crust did not turn out so well because the crust was very difficult to cut. I also added about 1/4 c. white chocolate chips to the batter. That made for a nice surprise. yummy

Date and Nut Bread

Reviewed: Sep. 21, 2011
Very dense, & heavy. Grandson took some in school lunch with pb&j and seemed to get some attention from some of the adults there. Found it a little hard to slice. Used coffee and added fruit and nuts at the start of cycle. Increased recipe to 16 servings because my machine can handle it. Didn't have rolled oats. Substituted the quick oats and I think this may account for the texture. Will make again. Seems like a very healthy bread.

Sauerkraut Rye Bread

Reviewed: Sep. 16, 2011
Made this bread as directed and followed some suggestions, like the addition of cocoa powder. I did only use the tsp. of caraway seed to test it out first and it was plenty for us. Nice crust and dense texture. It did well in the bread machine, also. We are glad I tried this. Sauerkraut does need to be dried and chopped. Wonderful. Will make this again. Served it up with Amish butter, keilbasa, potatoes and baked apples. yummy!!!!

Honey Whole Wheat Bread

Did not raise well enough. Maybe I need to test my yeast. Very dense and moist. Nice crust. A little salty (will cut back on salt next time when using salted butter.)Will try this again.

Ham and Bean Soup II

Reviewed: Sep. 16, 2011
Excellent hearty base, however, did add a few things: 1 tsp. garlic powder, 1 tsp. brown sugar, 1/8 tsp. cayenne, 5 chicken bouillon, 2/3 c. mashed potato. Served with honey wheat bread. Added lots of smoked Amish ham chunks (no bone.) This was a huge hit at our dinnner table made up of all males except me. I did soak the beans overnite to cut down on the gas factor. Will make this again and again. thanks!!!

Ham and Lima Bean Soup

Reviewed: Sep. 7, 2011
Wonderful and hearty. I had to substitute chicken cubes for the chicken broth, and dried parslely. Also, added 1 small can tomato sauce and used dried potato flakes, as recommended. Used 2 meaty ham hocks. This recipe is easy to adjust for substitutions. Will make again. Family loved it.

Cinnamon Bread I

Reviewed: Nov. 9, 2008
Had my 14 year old grandson make this for the family this gray Sunday morning in West Va. It was sooo easy. He tried both the recommended crumb batch on one loaf and the 3x crumb batch on the second loaf. Everyone agreed the 3x crumb batch was the winner. He used 4 small loaf pans on the second batch. This worked well also.
