Chewy Chocolate Chip Granola Bars

Reviewed: Jan. 12, 2011
I thought these were very good, however I gave them 4 stars because if I had added all of the dry ingredients listed, it would have been far too crumbly. I only used 2.5 cups of rolled oats, 1/3 cup of wheat germ and omitted the cereal all together. I used dark instead of milk chocolate chips because that's what I had and I think it would have been better with Milk chocolate chips. I could taste the applesauce a bit. A bit. If I did not know it was in there I would probably just wonder what that slight flavor was and continue eating it though. I will definately make again.

Baked Teriyaki Chicken

Reviewed: Feb. 21, 2010
I thought this was very good! As other reviewers suggested I cut the sugar down because I thought this would be a sweet recipe but it was just right. Very good and very easy to make. I doubled the sauce, by the way and I just dumped the sauce over the chicken and I cooked it uncovered. Will make again, thanks. I served it with fried rice and green beans.

Peach Cobbler VI

Reviewed: Apr. 9, 2009
This is the first peach cobbler I have ever made and I thought it was fantastic. BUT.. I am not a peach cobbler fan, crazy, because I am from south MS. My husband who LOVES peach cobbler ate it up. The only thing was that he said it was more "bready" than peach cobbler he is used to. And I agreed, it has a bready feel to it. But I guess that is how I like it! Will make again.

Easy Apple Cinnamon Muffins

Reviewed: Mar. 25, 2009
I haven't tried these yet, I just popped them in the oven... I wanted to add that when you make the topping, I think it would be better to use oats instead of flour bc the flour and butter mixture made it into a paste that you have to spread onto the uncooked muffins which is difficult. I followed the advice of one reviewer and cut the butter down to 1/4 cup and still I had a paste. If I had used oats I would have been able to sprinkle it. Will update after I eat them, lol. ** ok that was a bad idea. The butter melted and a sugary caramel was formed and leaked all over my oven.**

Cream Cheese Cookies II

Reviewed: Feb. 2, 2009
DELICIOUS!!! I made these as a desert for some company we had over the weekend and they loved them! THe kids loved them, their kids loved them, I got exactly 24 cookies just like the yield suggested. They were fabulous, so soft and chewy. I am making these for Valentines day for my sons class and I am going to use red food coloring in the icing! Will definately keep this recipe, thank you. Oh yea, I used shortening instead of butter. I always get a softer cookie that way.

Favorite Peanut Butter Cookies

Reviewed: Jan. 18, 2009
I will say these were good cookies, but they werent addicting or anything. They had that bland cafeteria peanut butter cookie taste. My kids ate them though. I added 1 cup of chopped peanuts to them. I think I may stick with my 3 ingredient peanut butter cookie recipe.

Fluffy Whole Wheat Biscuits

Reviewed: Jan. 18, 2009
I have never made biscuits before and I was looking for something to go with some leftover smoked turkey. I liked the idea that these were whole wheat so I gave them a shot and must say I was impressed. I thought biscuits took so much more work than this, these were so simple! I did as another reviewer did and added a tsp of minced garlic and 3/4 a cup of shredded cheddar and I was pleased with the taste. However next time I will use all whole wheat flour and up the baking powder as suggested, and add 1 cup of shredded cheddar and 1 tbsp of minced garlic, just for that extra shot of flavor. Very fluffy. I think I worked my dough too much bc I think they should have been a bit fluffier and used way too much flour on my floured surface, my biscuits were dusty! Will make again.

Sturdy Whipped Cream Frosting

Reviewed: Jan. 2, 2009
I am rating this frosting recipe before I even frost the cupcakes! 5 stars for ease of preparation and speed! And taste! I did not have any almond extract so I just used 2 tsp of vanilla extract and I think the flavor is great! Light and not too sweet and overpowering, it seriously tastes as great as cool whip! I dont know about the sturdy thing bc like I said I havent even frosted the cupcakes yet, but if it works out, I will use this frosting for birthday cakes and more!

Chocolate Chip Candy Cane Meringue Cookies

Reviewed: Dec. 16, 2008
Oh my goodness these are yummy! I followed the recipe to a "T" except for walnuts bc I didnt have any. I have only had meringue cookies once or twice growing up and I must say these are the best I have had. I made this today as a sort of preview for a recipe I had in mind for Christmas Eve to sort of just see how it came out and I will definately use it now. So simple.

Sloppy Joe Sandwiches

Reviewed: Dec. 12, 2008
I thought this was pretty good considering how simple it was. I dont have worcestershire sauce on hand and I was completely out of brown sugar so I subbed for barbeque sauce and white sugar and I think it was good. prolly would have been better using brown sugar though. I fed it to hubby and he ate 3 sandwiches and then I asked him if he liked the sloppy joes and he said they tasted a little different but were good and I told him I made the sauce because I thought i had a can but was mistaken. His eyes widened..... kids didn't touch it but they come and go with sloppy joes. I would definately make again but with all correct ingredients.

Quick and Easy Brownies

Reviewed: Dec. 11, 2008
These are the first homemade brownies I have ever made and they are just as good if not better than the box mixes! I had to substitute shortening for butter since I was low and I only used 3 eggs so they wouldnt be so cakey and followed the recommendation for only 1 cup of flour. Yummy!

Butterscotch Bread Pudding

Reviewed: Dec. 7, 2008
OMG!! So yummy! I added cinnamon and doubled the butterscotch chips thinking I was gonna be slick and have more butterscotch flavor. Ha! Wont do that again. My chips never fully melted so I had this butterscotch sauce flowing through my pudding next time I will stick to 1 cup. I will so make this again!

Juicy Roasted Chicken

Reviewed: Dec. 7, 2008
I have to be honest and say that this was the most flavorless chicken I have ever made. It just roasted there in this sea of butter and everytime you touch it your hands are just forever greasy, it was so aggrivating. I used onion powder inside the chicken and out and even put 2 cloves of garlic in the cavity instead of celery and I still didnt care for it. Dont get me wrong, it was a juicy roasted chicken, but not much for flavor. I would prolly never make this again.

Skin-on Savory Mashed Potatoes

i thought these were quite good. I was glad to not have to peel potatoes. I dont believe I will make these everytime bc there is just something comforting about smooth mashed potatoes but these were very good.

Alfredo Sauce

Reviewed: Dec. 7, 2008
So delicious! I doubled the recipe for a large crew and had to use half shredded parmesan and half grated parmesan so it wasnt quite as smooth as it could have been but it was a big hit! Will use this one every time.

Granola Cereal Bars

Reviewed: Dec. 3, 2008
I made these bars several times now and hopefully this time I have success. They call for way too much dry ingredients so def cut down on those. I used honey instead and cut the brown sugar in half. didnt give me as much "glue" but i got half a pan out of it.
