Laura's Quick Slow Cooker Turkey Chili

This was really good! I did change it a little like others did by using only one can of soup and a can of diced tomatoes with chiles. I also replaced the pepper flakes with 2 seeded, chopped jalapeno peppers, which gave it a nice spicy tang. It was super easy to throw together and very yummy! Recommended!

Simple Sweet and Spicy Chicken Wraps

I followed the directions almost exactly.... I used 1/2 light mayonnaise & half fat-free sour cream for the sauce to try and lower the fat content a smidge and added extra cucumber to it. The cayenne can be altered because it is a bit spicy but our family loves spicy so, for us, it was good. I also added a tiny amount of reduced fat cheddar to each wrap. My oldest hasn't been wanting to eat much lately... told me he only wanted a small one and ended up eating 3 in the end!!! Yum :)

Grilled Tilapia and Mango Salsa

Delish!!! The recipe calls for Tilapia but I had Snapper so that is what I used and grilled on my indoor grill... I also, used cilantro instead of parsley in the salsa but other than that, I followed the directions... Yum Yum Yum!

Turkey Gyros

These were wonderful!!! I made the sauce first to give the ingredients a chance to meld. To warm the pita bread, I put it on a plate, covered it with a wet paper towel and microwaved each one for 30 seconds. Made them much more pliable. All the flavors were terrific together and my whole family can't wait to have it again! Oh and it didn't take long to put together, about 30 minutes, which is a HUGE plus for families on the run! :)

Fish Tacos

I have been making my fish tacos similar to this for years! I do it a little different though. First I make like a coleslaw with red & green cabbage, minced jalapeno, minced cilantro & shredded carrot, then I mix the salsa and sour cream in with a dash of lime juice. I bake my fish and I sprinkle it with chili powder, cumin, garlic powder, a pinch of cayenne & salt, all to taste. Serve it with a little reduced-fat Mexican cheese blend and wrapped in a warmed corn tortilla.

Jamaican Jerked Chicken

This was AH-MAZING!!! The recipe calls for a whole cut up chicken but I used chicken tenders. I didn't have any ground cloves so I used 1/4 teaspoon of pumpkin pie spice in it's place. Used one good sized jalapeno instead of measuring. Marinated for about 4 hours instead of 8 and cooked on my indoor grill till they were no longer pink. They had an ever so slight spicy hint to them and it amazed me how good this was! NOTE: If you decide to boil the marinade to put over it. I suggest adding a dash of salt and a couple of tablespoons of water. TOTALLY making this again!!! Thanks for the recipe!

Emily's Famous Chili

Only thing I did different is used green bell pepper instead of red and chipotle chili powder instead of the chiles themselves (because for 1- I didn't have any & 2- A lot of reviewers said it was REALLY hot with the peppers themselves, using the powder made it so I could make it as hot or not as I wanted!) YUMMO! Totally hit the spot for my chili craving! :)

Spicy Eggplant

Ok, so this recipe actually was supposed to be for Spicy Eggplant however, when I cut into my eggplant it was bad (brown all the way through). So, needless to say I had to make a change. So I replaced the eggplant with firm tofu, and cooked the rest according to directions. I added about 1 teaspoon of grated ginger, and about 8 oz. of edamame to the mix too. I also replaced the chili sauce with chile paste and a squirt of sriracha... turned out delish! :)

Mom's Portuguese Beef Stew

I used half cup beef broth and half cup of a pink wine (red & white mix, because I didn't have white) and fresh green beans instead of canned. The sweet potato/yams added an underlying sweetness that I didn't expect but was pleasantly surprised. Delicious!!!

Shredded Potato Quiche

I doubled this recipe because I had several people to feed. I used a 9x13 inch casserole dish. I used fresh potatoes and grated them into the bottom of the dish, tossed them with a little garlic salt, pepper and a couple cloves of minced garlic. Baked according to the directions and proceeded with the rest of the recipe. I did use bacon instead of ham, mozzarella instead of swiss, added goat cheese, chopped zucchini, chopped yellow squash and pepper flakes. Since I used a larger container to cook it, it took longer to bake, 40 minutes later, we had a delicious dinner! Thank you! I was looking for something that used potato instead of pie crust. This was spot on! :)

Quick and Easy Chicken Noodle Soup

Very good, easy and quick! Only thing I different was I added the carrots in with the celery and onions to saute and topped it with some chopped flat leaf parsley! Yum!

Stuffed Shells IV

These were absolutely delicious! Only thing I did different was I only had a 16 oz. jar of sauce, so I added a can of diced tomatoes to it along with a pinch of Italian Seasoning and Hot Pepper Flakes to add a little heat. My family raved!!! Thanks for this fairly easy and tasty recipe, I will be making it again! :)

Grilled Pork Tenderloin

Easy! Tasty! My husband ate half of it during the slicing process! I think the rest of the family was lucky to get any... He loved it that much!!! The kids inhaled it too! Definitely will go on our regular rotation! Thanks Cathy! This is awesome :)

Sweet Potato Enchiladas

I did make a few itty bitty changes.... to start with I only used 4 sweet potatoes (I only had that many), I doubled the seasonings and used 6 green onions (green & white parts). I did NOT fry my tortillas! In my opinion corn tortillas need to be lightly toasted to bring out their full flavor potential, however doing so makes them crispy and next to impossible to roll... Solution? Dip them in the enchilada sauce= instant rollability. :) So just use a nonstick skillet over medium-high heat and let them get slightly golden (takes like 5 seconds). Dip and ready for rolling. I used hot enchilada sauce which was delicious!!! These are on our menu often from now on. I should have mentioned above... these made more than 12 enchiladas, I got 24 out of the amount of filling with 4 sweet potatos.

Slow Cooker Beef Stew I

Total Yum! I was a tad surprised how much this hit the spot! Perfect and tasty! Made exactly as written. I personally thought it needed a little more salt but I also believe that salt is a personal preference thing and should be added to ones meal and not the whole dish! So good! I can't wait to have it again! Thanks for the recipe!

Pumpkin Pie Bread

Absolutely Delish! I only used 1/8 cup oil and the rest was No Sugar Added Applesauce. I also cut the sugar down to 2 cups instead of 3 because applesauce is naturally sweet. I made some Cinnamon Cream Cheese Frosting and served it with that. My family was in Autumn Food Heaven! :D

Parsley Spinach Chicken Stew

This was slightly suprisingly excellent! Healthy for you and very tasty. Only thing I did differently is I added carrot and baby bella mushrooms at the same time as the potatoes to make it go a little further with my family. My youngest son is far from the biggest fan of veggies but he ate an entire big bowl of this... well after a little coaxing to actually try it but once he did, he demolished it! Yup, this is a regular in our house from now on, you can't beat healthy AND great tasting! Thanks Ladan Miller for the wonderful recipe!!!

Personal Portobello Pizza

Use the mushroom for the crust! Genius!!! Used onion, garlic and green pepper in place of the olives to cut the sodium count a little and used turkey pepperoni. Pretty darned good!!! :)
