Grilled Pork Tenderloin

Easy! Tasty! My husband ate half of it during the slicing process! I think the rest of the family was lucky to get any... He loved it that much!!! The kids inhaled it too! Definitely will go on our regular rotation! Thanks Cathy! This is awesome :)

Vinaigrette

Followed the recipe but used balsamic vinegar instead of red wine vinegar because I didn't have enough. Added a smidge more sugar because balsamic is strong and added fresh basil from my garden. So Yummy!

Southwestern Egg Rolls

I didn't change this recipe much. I used all the same ingredients, just added some garlic, a small pablano pepper and extra spinach and I substituted Cilantro for Parsley. To make it easier on myself I chopped up the chicken and cooked it then added the onion and so on... instead of cooking a whole chicken breast removing it then chopping it, much faster and easier. I also did NOT fry these! Turn the oven to 450 and bake for 10-15 minutes they turn out crispy and delish! Yum!

Spinach Enchiladas

I have made these a few times before, we love them that much! I added regular onion, jalapenos, minced cilantro and red bell pepper, oh, and I doubled the amount of spinach in addition to what the recipe called for. I also used FF cottage cheese blended in a food processor to make it smooth instead of ricotta. Instead of a red enchilada sauce, I used green and instead of mixing the sour cream inside the enchiladas, I mixed it with the enchilada sauce and poured over. Super delish, the whole family loved it! Note: In my opinion corn tortillas need to be lightly toasted to bring out their full flavor potential, however doing so makes them crispy and next to impossible to roll... Solution? Dip them in the enchilada sauce= instant rollability. :)

This was serious YUM! I skipped the chicken bouillon because it just seemed like an odd addition to me. I also added just a small pinch of minced garlic and added about 1/2 a cup of mozzarella to the filling. I used a bottle of butternut squash pasta sauce that I had for a long time that needed using instead of tomato sauce and it was scrumptious!

Black Bean and Corn Quesadillas

Only thing I did different was add green pepper in with the onion, used pepper-jack cuz that is what I had in my fridge and as usual, used my panini press to cook them :) Fast, Easy and Tasty... totally worth a try.

Mom's Portuguese Beef Stew

I used half cup beef broth and half cup of a pink wine (red & white mix, because I didn't have white) and fresh green beans instead of canned. The sweet potato/yams added an underlying sweetness that I didn't expect but was pleasantly surprised. Delicious!!!

Meatball Nirvana

Loved them! Used our favorite pasta sauce and topped some whole grain pasta shells tossed with sauteed mushrooms & zucchini with the meatballs!!! Yummy! Thanks for the recipe! :)

Fish Tacos

I have been making my fish tacos similar to this for years! I do it a little different though. First I make like a coleslaw with red & green cabbage, minced jalapeno, minced cilantro & shredded carrot, then I mix the salsa and sour cream in with a dash of lime juice. I bake my fish and I sprinkle it with chili powder, cumin, garlic powder, a pinch of cayenne & salt, all to taste. Serve it with a little reduced-fat Mexican cheese blend and wrapped in a warmed corn tortilla.

Apple Dip

Just 3 simple ingredients and delicious! Be sure to room temperature your cheese (I used Neufchatel for less fat). Also using an electric mixture to "whip" it makes it nice and fluffy and thoroughly mixes the ingredients. Top with a small pinch of brown sugar and viola! My kids were begging me to lick the bowl!

Baked Chicken and Zucchini

I followed what many other reviewers said and did not saute the zucchini first. I just put it directly into a casserole dish greased with olive oil. I also sprinkled the zucchini with a little Italian seasoning and just a little minced garlic, then followed the recipe from there on exactly. I used fresh zucchini, fresh basil, plus fresh red and yellow tomatoes from the family garden. This was SO good, I wish I had more for lunch tomorrow but it was all cleaned out by the family and left the plates licked and empty! Yum!!!

Asian Lettuce Wraps

These got rave reviews and now I understand why! They are phenomenal! I didn't have pickled ginger so I used fresh and that is the only thing I did different. I used 93/7 ground beef and used low sodium where I could. Used Boston Lettuce which were the perfect little cups for this divine meal. Yummy! I can't wait to make these again.

Southern Pulled Pork

I followed the recipe almost exactly except I had about 1 3/4 cup beef broth in my fridge that needed using so I used that in place of some of the water. I just added enough water to get to 4 cups. I served this on toasted hoagie rolls, drizzled with a little sweet & spicy barbeque sauce and topped with coleslaw. The meat alone was fantastic and made some amazing sandwiches!

Pork Chops with Blue Cheese Gravy

I didn't have any pork chops so I sliced up a pork tenderloin but followed the recipe exactly... all I can say is OMG Delightful! Even my extremely picky 4 year old ate it and loved the sauce... very decadent and delicious! Recommended!

Perfect Sesame Chicken

All I can say is WOWZERS!!! This is one fantastic recipe... my entire family loved it! Even the husband who really hates chicken! I changed very little about the recipe... I used just 1/2 a cup of sugar (because we are watching our sugar intake levels) and rice wine vinegar instead of distilled because that is what I had on hand! Best Sesame Chicken Ever!!! Definately Restaurant Quality and Easy! Will become a regular on our table! Thanks so much for the recipe!

Cajun Style Baked Sweet Potato

Yum! Yum! Yum! Followed everything exactly except I cut them into fries and they were wonderful! Next time I am going to add a tad more cayenne because we like heat but they were so good, this is my go to recipe for sweet potato fries from now on! Thanks!.... I have recently taken to sprinkling the fries with just a tiny amount of grated Cotija cheese, it gives the fries a nice tangy contrast to their flavor.

Summer Vegetable Salad

Absolutely delicious! I doubled this recipe for a party and got rave reviews! Only thing I did different is add bit more sugar... unfortunately I didn't have the for-sight to measure it to share with you how much but I added until it mellowed the vinegar a bit. Taste test! I also just used one onion and chopped it small (not minced), I used only one even though I doubled the recipe because I didn't want to serve an onion salad :) I am having a party next month and I am pretty sure this recipe is making an appearance again! Yum!!!

Honey Fruit Salad

I totally agree with other reviewers of this recipe, fruit salad should only be eaten like this! It is so good. The dressing made with honey to mask the effects of the lemon to keep the fruit from browning is ingenious. Works with virtually any fruit. I used blueberries, strawberries, apple, cantelope, red grapes and kiwi. Thank you for this totally awesome recipe. I will be using this for many years to come!

Mini Meatloaves

I had never used oats or cheese in meatloaf before but it was actually very good. I loved the texture the oats gave but I'm not sure what the cheese contributed to the loaf, so next time I think I'll try it without. Only thing I did different was add onion because for me, meatloaf just isn't meatloaf without it. The topping was a little sweet to me but not terrible... Definitely will make these again!
