Mini Meatloaves

I had never used oats or cheese in meatloaf before but it was actually very good. I loved the texture the oats gave but I'm not sure what the cheese contributed to the loaf, so next time I think I'll try it without. Only thing I did different was add onion because for me, meatloaf just isn't meatloaf without it. The topping was a little sweet to me but not terrible... Definitely will make these again!

Cha Cha's White Chicken Chili

Can't give it 5 stars because I did alter it a little... I cooked the chicken and then added the onion because I didn't have any precooked chicken. I used 2 fresh jalapenos instead of canned. I used 1/2 tsp of cayenne and replaced the other 1/2 tsp with regular chili powder. I only used 1 can of low-sodium chicken broth because I didn't want my chili soupy. Last but not least I used only 1/3 of a cup of Pepper Jack Cheese, instead of an entire cup, to lower the fat content a little and well, quite frankly that is all I had. I topped with a tsp of light sour cream and a pinch of minced cilantro. This was still quite spicy but not overwhelmingly so. My kids complained about this being what I was making for dinner, however both went back for more. Easy & Tasty!

Spicy South of the Border Spinach Cheese Dip

I added a pinch of garlic to the saute'd onion. I also only had cream cheese spread with chives on hand so I used that. For a little more heat, I used Pepper Jack cheese. Lastly I used 3/4 cup 1% milk, not half & half, and about 1/2 a tsp of corn starch to keep the milk making it too watery... This was cleaned out in seconds! Absolutely delicious!!!

Fish Tacos

I have been making my fish tacos similar to this for years! I do it a little different though. First I make like a coleslaw with red & green cabbage, minced jalapeno, minced cilantro & shredded carrot, then I mix the salsa and sour cream in with a dash of lime juice. I bake my fish and I sprinkle it with chili powder, cumin, garlic powder, a pinch of cayenne & salt, all to taste. Serve it with a little reduced-fat Mexican cheese blend and wrapped in a warmed corn tortilla.

Sweet Potato Enchiladas

I did make a few itty bitty changes.... to start with I only used 4 sweet potatoes (I only had that many), I doubled the seasonings and used 6 green onions (green & white parts). I did NOT fry my tortillas! In my opinion corn tortillas need to be lightly toasted to bring out their full flavor potential, however doing so makes them crispy and next to impossible to roll... Solution? Dip them in the enchilada sauce= instant rollability. :) So just use a nonstick skillet over medium-high heat and let them get slightly golden (takes like 5 seconds). Dip and ready for rolling. I used hot enchilada sauce which was delicious!!! These are on our menu often from now on. I should have mentioned above... these made more than 12 enchiladas, I got 24 out of the amount of filling with 4 sweet potatos.

Thai Ginger Chicken (Gai Pad King)

I enjoyed this immensely! When you got a strip of ginger it was like a burst of bright flavor. I did not add any additional salt because in my opinion fish sauce is already incredibly salty but I did double everything that contributed to the sauce (broth, fish sauce, oyster sauce, sugar & chili paste) because my family likes sauce to go over their rice. Very good!!!

Mom's Portuguese Beef Stew

I used half cup beef broth and half cup of a pink wine (red & white mix, because I didn't have white) and fresh green beans instead of canned. The sweet potato/yams added an underlying sweetness that I didn't expect but was pleasantly surprised. Delicious!!!

Lime Chicken and Mushroom Pasta

With the exception that I added about 1/2 a teaspoon of minced garlic to the saute`d chicken, I followed the directions exactly. This was fresh and delicious and super easy... got it done in 20 minutes!!! Mmmmm.....

Sean's Falafel and Cucumber Sauce

I did not add the mayo to the cucumber sauce which I made first to meld the flavors. I did not fry my falafels instead I baked them at 425 for about 18 minutes, then flipped them for another 5 to finish them off. I tossed some salad greens (and purples) with a little lemon juice, salt and pepper and placed it on the plate. Topped the salad with about a teaspoon of feta cheese and placed the falafels on top and topped those with the cucumber sauce. Served with some nice juicy tomato slices... Mmmmmm... Falafel Heaven!!! :)

Carrot, Tomato, and Spinach Quinoa Pilaf

The Quinoa had a delicious flavor but for some reason mine didn't "pop" and get fluffy like quinoa is supposed to and stayed slightly firm (almost al dente` if quinoa gets aldente, lol). Not so firm that it was inedible and it did taste good! Will try it again... wondering if the bouillon in the water counteracted with my brand or something. Next time I'll just use chicken broth like I usually do. Will be making it again because it was that good and willing to give it another whirl! :)

Basic Chicken Salad

Yum!!! Light and Fresh! I loved the crunch of the almonds and celery! Next time I may add just a little lemon zest to brighten it slightly and see how it turns out. So good! Thanks for the recipe!

Slow Cooker Carnitas

I had a 6.5 pound pork shoulder blade roast with a bone in it so I cut it into pieces removing the bone. Coated each piece of meat in the seasonings (doubled except the cinnamon) and cooked on low for 8.5 hours. I made a cilantro-chile-lime sauce for tacos (which is what we used the carnitas for) out of lime juice, fat-free sour cream, cilantro, chile powder, cumin, garlic powder, finely minced red onion and cayenne. These were so good my husband ate 6 tacos and my picky little boy ate 3!!! Bueno! Bueno! Bueno!!!

Coconut Curry Tofu

This was good! I was hoping to duplicate the curry from our favorite Thai restaurant but this didn't even come close. That's ok though, it was tasty in itself. I doubled the sauce ingredients because I wanted a saucy curry. I too, fried the tofu because from past experience I didn't like how gets mushy otherwise. I didn't add salt at all. Followed everything else to a T. The green onion spears on top are a must!!! They add a nice crunch and burst of fresh to each bite! Yum! Thanks for the recipe!

Grilled Tilapia and Mango Salsa

Delish!!! The recipe calls for Tilapia but I had Snapper so that is what I used and grilled on my indoor grill... I also, used cilantro instead of parsley in the salsa but other than that, I followed the directions... Yum Yum Yum!
