Seafood Lasagna II

Wow, this was pretty good! Even my kids loved it! Only thing I changed was I used ricotta instead of cottage cheese, I used a little garlic in addition to onion, I used fresh herbs from my garden (mostly basil, a little oregano & a little parsley) and used mozzarella instead of cheddar. Yummy! Will make again.

Sesame Beef

Scrumptious! I didn't change much but I added a smidge of chile paste to the marinate because we like our asian food with a bit of heat but it didn't alter the flavor much. I also wanted to make this a stir-fry, so I marinated the meat as directed but before cooking the meat I cooked up some bell peppers, carrot, onion and broccoli to tender-crisp, then I removed that from the skillet. I then cooked the meat, as that cooked I added about 1.5 tablespoons of cornstarch to about 3/4 of a cup of chicken broth I had in the fridge. Once the meat was cooked, I added the entire marinade (which I tripled by the way) let it simmer for 2 minutes then added the cornstarch mixture. Once it thickened I added the veggies and served immediately over jasmine rice.

Unbelievable Chicken

This was quite tasty but I wouldn't label it unbelievable, that is what my guests said when I served this at a barbecue recently. I made 6 pounds of chicken tenders and had to guess on the adjustment of measurements. Almost all of it was gone, so in my book this recipe gets an A! Thanks for sharing!

Party Pinwheels

I made these for a party and everyone said they were SO tasty and were surprised they were meat free, meaning they didn't miss the meat. I doubled the recipe but only used enough of the ranch flavoring for one recipe (so I pretty much cut it in half). They were yummy! Will make again! After Note.... I made these again this year for our annual party and doubled the recipe and had none left... again! They are good, everyone enjoys them immensely. I have made them with regular, sun-dried tomato and spinach tortillas. I personally highly prefer them with regular flour tortillas because I don't think they interfere with the filling flavors. YUM!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

As someone who isn't a fan of Salmon... All I can say is... This IS Heaven!!! I made 2 whole fish for a party and it was gone within an hour! Delicious! Nice smokey and the spices make it absolutely wonderful!!!

Chicken Tetrazzini IV

MMMMmmmmMMMM Good!!! Doubled recipe for large family and everyone loved it!!! I barely changed it but I used fresh mushrooms and added onion and garlic. Also used half & half instead of cream to lighten it up a tad. I also added some italian bread crumbs to the parmesan on top because the tetrazzini I had as a child always had that little breaded topping... Definately wonderful, changed or not! Thanks so much for the recipe!

Slow Cook Thai Chicken

This was tasty! Even my husband, who doesn't like chicken much, enjoyed it and said he'd eat it again. I followed the recipe exactly (except I added the onion and pepper about half way through, so they wouldn't disappear) and had no complaints! Thanks for sharing this!

Whipped this up for dinner one night because I was low on energy and had everything it called for... I followed it exactly and found that was pretty good, even my picky little one liked it. I made it in a skillet on the stove top and it turned out just fine. Will make this again!

Shrimp and Crab Enchiladas

Ok, I did change this up just a little to fit what I had on hand and to better fit our budget.... I used imitation crab meat because at $4.29 lb compared to $17.99 lb way better fit my budget. I also, used precooked mini shrimp meat but I also got about 5 large scallops and chopped them up because they were on sale at my husbands work. I took other users advice and added a box of low-fat cream cheese to bind the seafood together. Also added, because I am always trying to sneak some veggies in, some diced red pepper, green onion and a 4 oz. can of green chiles, along with some of the grated cheese and a few spices (cumin, chile powder and cayenne, if I remember correctly). I used corn tortillas because enchiladas just aren't enchiladas to me without them. Toasted those, then dipped them in the green enchilada sauce to bring out their flavor and make them easier to roll. Added filling and put them all in the dish. Before adding the sauce, I decided to spread about a cup or so of sour cream over the enchiladas, then added the sauce, then the cheese. These were scrumptious, I wish I had the foresight to make a second dish! Will make these again VERY soon! Thank You for the recipe.

Baked Ziti I

This was good, REAL good... I followed a lot of recommendations and put the sauce directly on the pasta. Also to sneak some veggies into the dish, I sauted up some mushrooms, garlic and a 10 oz. package of frozen chopped spinach and layered it in middle with the provolone and sour cream. Even my 4 year old NO VEGGIES!!! eater ate this... will make again :)

Smothered Mexican Lasagna

This was pretty good, I think the only reason I wasn't thrilled with it was because I really don't like the texture of ricotta cheese personally... if I make this again, will have to think about what I can replace it with... the family enjoyed it overall, thanks for the recipe!

Chicago-Style Pan Pizza

Yummy! Couldn't find frozen bread dough so I used 2 packages of refrigerated pizza dough. I also took the advice of others and baked the crust for 15 minutes before adding the toppings, and used Italian-style diced tomatoes on top of seasonings, turned out wonderful! Will make this again soon! Thanks for the recipe!
