Ham Croquettes

I've made this twice now & both times turned out delicious. However, the 2nd time, after I finely chopped the ham & added the veggies, bread crumbs & eggs, I used a hand blender to give it that final "paste-like" texture before dredging & frying. It came out way better like this, I think. I chose to omit the cheese this time as well-just because we didn't feel like it & it still turned out great. Thanks for the great recipe!

Bulgogi (Korean Barbecued Beef)

Excellent! I actually used spare ribs with the bones 'cause that's what I had on hand & they marinated in my fridge for like 3 days (I was sick & forgot all about them!). Put them under the broiler for about 5-6 minutes per side, & they turned out AWESOME! I, too, skipped the MSG altogether. I didn't add carrots or the yellow onion as I didn't have any but I don't think they were missed. Thank you for this recipe! A definite keeper!

Avocado Shrimp Ceviche-Estillo Sarita

I used this recipe over the weekend to make ceviche for the first time but there's no going wrong on this! It was perfect! I had some time, so I did let the shrimp sit in both lemon & lime juices for about 4 hours. I also cut the recipe in half & it was plenty to serve 4 peeps. Based on other recs, I skipped the ketchup & used a couple tablespoons of cocktail sauce. I certainly did not measure out the cilantro or onion. I just did what felt right. All in all, a super delicious recipe! Thank you for posting!

Super Al's Cocktail Sauce

I too used extra hot creamed horseradish & it came out PERFECT! I enjoy the extra kick in my food, so I also added some Tabasco. I will never buy cocktail sauce again! Thanks, Al!!

Asparagus with Parmesan Crust

I took the advice of Mrs. Chef Esh & dumped the asparagus, EVOO, & balsamic vinegar into a ziploc with some minced garlic. I let it sit in the fridge for about 1.5 hours. Popped it in the oven at 450 for 10 minutes & they were delicious! I probably added more than 1 oz. of Parmesan - didn't really measure as we love cheese; burnt Parmesan is the best! I made this as a side with our filet mignon last night & it was perfect! This is my new way of making asparagus from now on! Thank you so much for sharing this recipe!!

Best Brownies

I am NOT a baker but you just can't go wrong with this recipe! It's so easy & oh so good. I took the advice of others & didn't use a mixer. Instead, I just hand mixed it with a fork. I baked it for 25 minutes & they were perfect. I didn't make the frosting either, didn't need it at all!

Creamy Au Gratin Potatoes

Excellent! I've never made this before & it turned out ridiculously great. I cut the recipe in half since there is just 2 of us here. I also took the advice of another member & removed the foil the last 15 minutes of baking. This resulted in a brown crispy crust that was awesome! Thank you!

Delicious Peanut Butter Cookies

This is the first time I've ever modified a recipe. Based on others' reviews, I upped the PB to 1 cup, but otherwise kept it the same, & it came out yummy! I was a little scared as I can't ever seem to get PB cookies right! I may use a little less baking soda next time too, but this is definitely a keeper! Thank you!

Chocolate Covered Strawberries

These are the best! I don't own a double broiler so I microwave the chips with the shortening, at 30 seconds at a time, twice. I stir in between & the remaining chips just melt as I stir. I have tried using butter instead of the shortening but what every single time I've done this, the chocolate seems very "soft" out of the fridge. It doesn't have that slight crunch you get when you buy them whether at Godiva or at the fair. But they come out perfect when I use the shortening.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are by far the BEST CCC recipe. EVER! I bake mine for 14 minutes at 325 degrees & let it rest for 3 minutes before transferring to a wire rack. Perfect! I did not refrigerate as some did & they came out great! My batch makes exactly 2 dozen not too big/not too small cookies. If you only want to make a dozen, the dough also freezes well.

Strawberry Pie II

I've never made any kind of pie before but I had a million strawberries that I did not want to go bad. It was DELISH! & SO SO easy!! The color wasn't red-red like you'd find at the store, but that was OK with me because I didn't want to add any artificial coloring. I took the advice of another member & decreased the sugar to 3/4 cup and also added a tablespoon of butter when the syrup was done. I let it cool cool & poured it on the pie. It sat in the fridge for about 6 hours & it was perfect after dinner. No soggy crust here. Thank you SO much!

My Best Clam Chowder

The BEST clam chowder, ate it for leftovers 3 nights straight! I also did the bacon thing. I used 5 cans chopped clams and 2 cans whole clams. This recipe is a keeper. Thank you!
