Ham Croquettes

I've made this twice now & both times turned out delicious. However, the 2nd time, after I finely chopped the ham & added the veggies, bread crumbs & eggs, I used a hand blender to give it that final "paste-like" texture before dredging & frying. It came out way better like this, I think. I chose to omit the cheese this time as well-just because we didn't feel like it & it still turned out great. Thanks for the great recipe!

Asparagus with Parmesan Crust

I took the advice of Mrs. Chef Esh & dumped the asparagus, EVOO, & balsamic vinegar into a ziploc with some minced garlic. I let it sit in the fridge for about 1.5 hours. Popped it in the oven at 450 for 10 minutes & they were delicious! I probably added more than 1 oz. of Parmesan - didn't really measure as we love cheese; burnt Parmesan is the best! I made this as a side with our filet mignon last night & it was perfect! This is my new way of making asparagus from now on! Thank you so much for sharing this recipe!!

Apple Turnovers

OMG! AMAZING and SO EASY!!! As suggested by others, I doubled the cinnamon and didn't bother with the lemon/water bath. I put everything together in the pan and slowly added the brown sugar til I felt it tasted right. I did use an egg wash and baked it for 20 minutes. Fricking amazing! Hubby's on his way back from a meeting and I just called and told him to make a detour home cause he NEEDS to taste this before going back to work! Hahaha! Oh, I didn't make the glaze, just sprinkled some sugar on top before baking.

Chocolate Covered Strawberries

These are the best! I don't own a double broiler so I microwave the chips with the shortening, at 30 seconds at a time, twice. I stir in between & the remaining chips just melt as I stir. I have tried using butter instead of the shortening but what every single time I've done this, the chocolate seems very "soft" out of the fridge. It doesn't have that slight crunch you get when you buy them whether at Godiva or at the fair. But they come out perfect when I use the shortening.

Oatmeal Peanut Butter Cookies III

These are the best!!! I followed the recipe to the T and they came out perfect. I baked mine for 9 minutes. I took the advice of a member here and dipped some in chocolate. I can't say which I like better because they both rocked! Thank you for submitting this recipe!

Avocado Shrimp Ceviche-Estillo Sarita

I used this recipe over the weekend to make ceviche for the first time but there's no going wrong on this! It was perfect! I had some time, so I did let the shrimp sit in both lemon & lime juices for about 4 hours. I also cut the recipe in half & it was plenty to serve 4 peeps. Based on other recs, I skipped the ketchup & used a couple tablespoons of cocktail sauce. I certainly did not measure out the cilantro or onion. I just did what felt right. All in all, a super delicious recipe! Thank you for posting!

Absolutely Awesome BBQ Sauce

Great recipe, thank you! Made this last night to go with our chicken wings. Like others, I only used 1/2 cup of sugar. What a nice change to store bought sauce. It's a pretty small batch when it's done, so I had to make another. Next time I'll know to double or triple the recipe.

Crispy Fried Chicken

OMGOMGOMGOMFG! Fried chicken would be my last meal if I was on death row. I'd die of a clogged artery before anyone could inject the lethal stuff... Having said that, I've searched for years for the best recipe, and THIS IS IT!! I didn't measure anything. Poured some buttermilk in a dredging pan and threw in the flour, salt, pepper & lots of paprika in a Ziploc. Let it rest in the fridge until it became a paste-like consistency & took it out for about 15 minutes before cooking so it was at room temp. Filled my cast iron pan halfway with oil. More cooking time on breasts with the rib but it was worth the wait. SO GOOD. Thank you!!

Pot Stickers Traditional

I used ground turkey, salt & pepper, & chopped red onions since that was all I had. Fry for 4-5 minutes until the bottom side is brown, added 1 cup of water & covered for 10 minutes. I mixed ponzu & siracha for the dipping sauce. You do not need to precook the meat. Thanks for a great recipe!

Cranberry Sauce I

I have ever made my own cranberry sauce before because everyone likes the canned jellied stuff. This was a big hit! It was so easy too! As recommended by others, I did half water, half orange juice, half white sugar & half brown sugar. I let it sit on the counter for about an hour and cooled in the fridge. It did thicken nicely. Super delicious!

OMG! So easy & so good! I too omitted the orange juice and added a pinch of nutmeg and a dash of vanilla. I love the crunch on the marshmallows as well. Super yummy! Thanks for a great no-fail recipe!

This came out awesome! I will take one member's advice & cut the water & broth in half. I think I would rather have it just a little thicker next time. Although it was perfect as is. No lime/bay leaf is fine.

My Best Clam Chowder

The BEST clam chowder, ate it for leftovers 3 nights straight! I also did the bacon thing. I used 5 cans chopped clams and 2 cans whole clams. This recipe is a keeper. Thank you!

Strawberry Pie II

I've never made any kind of pie before but I had a million strawberries that I did not want to go bad. It was DELISH! & SO SO easy!! The color wasn't red-red like you'd find at the store, but that was OK with me because I didn't want to add any artificial coloring. I took the advice of another member & decreased the sugar to 3/4 cup and also added a tablespoon of butter when the syrup was done. I let it cool cool & poured it on the pie. It sat in the fridge for about 6 hours & it was perfect after dinner. No soggy crust here. Thank you SO much!
