Mom's Zucchini Bread

This came out great. I'm not crazy about the amount of sugar in it though, I cut out a 1/4 cup of sugar and it worked fine, I might try cutting out a bit more sugar next time. I also want to try adding carrots too.

Lentils with Chorizo

Easy to make vegetarian, or to customize. My roommates and I loved this recipe. The things I did different: first, I sliced a single jalapeno and let that simmer with the lentils; Next, I used spicy soy chorizo, instead of pork or beef chorizo, because I like the flavor better and it has half the fat; Lastly, I added half a can of green chilies to the veggie mix because I needed to use them up. I let the individuals top their own bowl with cotija and mexican crema.

Chicken Alfredo Pesto Pasta

The sauce was watery, The cream cheese didn't melt so much as separate and the flavor was bland. I followed the recipe exactly.

Italian Sausage Market Meatloaf

Great recipe. I omitted spinach and bell peppers and used El Pato brand hot tomato sauce for chile sauce and Quaker old fashioned oats. I used pepper jack cheese in place of provolone. I split the mixture into two 6x9 Pyrex dishes (my larger dish was lent out) and added potato and parsnip wedges around the edges (these turned out a bit dry.) In the future I will cut the amount of onion in half and leave out the corn as well.

Eggplant Delight

Delicious! I changed it up a bit by adding jalapenos (I love heat) and various color bell peppers. No salt and pepper needed this way.

Diet Soup

I couldn't find the dry soup so I used Swanson broth instead of water and dry mix. It turned out great. I like spicy food so I added fresh seeded jalapenos and topped the final product with lime and tapatio (chile sauce.)Excellent!

Jalapeno Hamburgers

I just tried this recipe with modifications and it came out great. I increased the amount of garlic and left out the cilantro. I used fresh garlic and fresh home grown jalepenos. The tomato paste didn't sound appetizing so I used 1 tbs of Worcestershire sauce instead. I used a recipe for Cajun spice mix submitted by Bobbie Jean on allrecipes. I topped it all off with a slice of swiss cheese. I will definitely make this again.
