Savory Roasted Root Vegetables

Love it! What an amazing array of flavor going on in this dish, though I love all these veggies. It's so simple and can be very versatile. I added sweet potato and extra garlic and kale toward the end...and some balsamic vinegar. This one is a keeper!

Very good, I took the advice of other reviewers and added roughly a Tbsp of cumin and a tsp of garam masala for added flavor. I also used mushroom broth and added sauteed mushrooms as well. A great basic recipe to explore different flavors with

Fried Cabbage II

A pretty good recipe...the sugar and apple cider vinegar balance very well. I also omitted the bacon for health reasons, plus I had bacon this morning :) I'll try it with bacon next time as I'm sure it's delicious!

Yum Yum! I did modify by using 1/2 c sugar; 2 Tbsp baking powder; almond milk in place of cow's milk; and applesauce in place of vegetable oil.

The Best Vegetarian Chili in the World

Delicious! I added another tsp of cumin and a bit more chili powder, then some cayenne & crushed red pepper (I love spice!) I added carrot and a variety of tomatoes and also a can of butter beans.

Morning Glory Muffins I

These are super yummy! I made a few changes to suit my taste & what I have on hand. I used equal parts all purpose & spelt flower (a variation of wheat flower); I cut the sugar back by 1/2; and I used a mixture of applesauce & apple butter and cut down on the vegetable oil just to make it a bit healthier. They were still pretty sweet though, I may cut the sugar down even more next time.

Taco Seasoning I

This is a fantastic base recipe for taco seasoning! I would add less salt and then salt to taste (and I love salt!) but everything else was great. You can adjust all seasonings to fit your taste but for the first run I followed exactly. It is spicy and delicious! Oh yeah, I mixed the crushed red pepper with cayenne for an extra kick and it rocked!

Mexican Lasagna

I really enjoyed this recipe. It cuts out the need to dip the tortillas in oil before rolling them like in regular enchiladas. I used Boca brand crumbles in place of meat and used the "Taco Seasoning I" instead of packaged mix (I'll never go back!) I also had to add a bit of veg stock & refried beans to moisten & "glue" the Boca together. I also used Rotel in the Boca to give it more spice (I love spice!) and freshly made salsa. It sounds like a lot of modifying but really I just made it vegetarian friendly : )

Cashew Raisin Rice Pilaf

This is like a party in the mouth! So many wonderful flavors (all which can be adjusted to your liking) I served this with a blackened mahi mahi and asparagus and it was a huge hit! I left out the pimentos (didn't have any) other than that I followed the recipe exactly and wouldn't change a thing! Unless of course to modify to suit specific entrees : )

Double Tomato Bruschetta

Delicious! I used a mix of tomatoes (what I had on hand from the garden) and also added parmesan cheese to the mozzarella. I eyeballed all the ingredients and it turned out fantastic. I brushed the bread with olive oil, broiled till lightly browned...then added the cheese. I kept the tomato mixture in a large bowl so people could serve themselves.

Banana Crumb Muffins

Awesome!!! So fluffy & moist! I used 1/3 c white sugar & 1/3 c brown sugar for the muffin. I also also added chopped pecans & walnuts (in both the muffin & the topping) soooooo delicious!!! I will make this again and again!

Banana Coffee Cake

Delicious! I added a cup of bananas and also added butter & brown sugar to the topping. I put mine in mini loaf pans so I can freeze some or give them away. Will definitely be making again.

Scallop and Shrimp Kabobs

it was ok. I would make some adjustments next time. More ginger, less tamari (or soy sauce) add pepper & a dash of olive oil. And I would recommend putting the shrimp/scallops on separate skewers as they have a much shorter cooking time. It's a good base.

Coconut Curry Tofu

This is a fantastic starter Thai recipe! I browned the tofu before adding the veggies & I added extra veggies (carrots, asparagus & chard..no bok choy) I would definitely recommend adding less soy sauce (I used the 3Tbs & no salt) and a LOT more spice. A very flexible recipe. YUM!

Yummy! I will definitely do this again! I had to substitute a little with what was on hand veggie wise but the sauce was by the recipe & fantastic! Oh yeah, I used veggie broth instead of water for the base.

Spinach Basil Pesto

Yummy!!! I thought the spinach may alter the flavor too much but it was awesome! I would slowly just add garlic to taste next time..it's a bit much (or maybe try roasted garlic?) and this is coming from a garlic lover! My cloves were pretty big tho. Great recipe!

Jalapeno Cranberry Sauce

Pretty good! I love spicy food & I don't really notice the jalapenos so next time I will add more. I also cut back on the sugar a bit but I enjoy the tart. I will make this again.
