Chicken and Tomato Stew with Arugula and Cannellini

This was delicious and will become a regular of mine. My boyfriend and I both enjoyed it. I love one pot dishes that are so satisfying. I did change a few things. Cooked pasta in boullion like a reviewer suggested, substituted 1/4 cup olive oil for 1 tablespoon and remainder chicken broth (lower calorie), used spinach instead of arugula (what I had on hand), and added capers because we love them!

Salmon Fillets with Mustard Glaze

This was really delicious. I made a few changes. I added a little white wine to the sauce and dill to the salmon. It does take a little longer than 10 mins for the sauce to reduce but it was well worth it. I will make this again!

Tantalizing Turkey and Blue Cheese Meatballs

These are awesome. Especially for turkey. Not dry at all. I subbed feta for cheese. Next time I will try the blue cheese. I forgot how good this was until I unfroze the leftovers. Yum! Update- I tried blue cheese. Stick with the feta...blue cheese was too powerful.

Slow Cooker Chicken Creole

It was ok. I will likely still eat the leftovers I froze but it was missing something. I couldn't pinpoint it. I even added wine and vinegar hoping to get more flavor vs just spice. If someone figures it out, let us know! It has potential. My boyfriend had suggested to add shrimp. I think that would be good.

Salmon Rosemary Burgers

These are excellent. So much flavor..better than beef! I have added this to one of my usuals. Boyfriend loves it to. Great healthy weekend dinner. Definitely let it chill though, otherwise it will not form patties.

Kathy's Baked Stuffed Tomatoes

Maybe I did something wrong but this not good. I couldn't eat it. It was very dry. I drained the garbonzo beans, and used a mix of fresh spinach and basil in place of the argula. Was not nearly creamy enough. Also, tomatoes aren't in season so even that part wasn't good. Bummer :(

Chicken Breasts Pierre

I actually created an account to warn people on this recipe. I have loved all chicken recipes I've tried on here so far that have used tomatoes as the base sauce. I'm always on the look out for a healthy and flavorful dish so I though this would be perfect. Wrong. This tasted like something that should be served at a bbq on a bun...I took the reviewers advise and added onions. This actually made it worse. The bbq taste does not mix well with rice either.
