Downeast Maine Pumpkin Bread
My husband loves this bread! It was so easy to make. I read some of the other reviewers substitutions before getting started. Here's what I modified: 1c unsweetened applesauce instead of the oil, only 2c sugar (1c dark brown, 1c white), substituted 1c white flour with 1c whole wheat flour. Used only allspice and cinnamon. Added 1c chopped pecans. Used 2 9x5" loaf pans. Baked both loaves together for 1hr 5min. Would shorten to 55 min next time. Makes a low-fat, less sweet bread that goes well with a sweetened coffee. Honey Wheat Bread I
I struggle with making bread, but you're recipe was simple. I broke the dough into rolls snuggled together in a deep cast iron pan like my mom used to do. My husband and I gobbled them up. They didn't rise as nicely as I think they could have, but I will work on my water temp next time. Thanks for your recipe!

Irish Brown Soda Bread
I was raised by an Irishman and never knew there was a whole wheat version of this bread. Smells like whole wheat french bread. Great with butter and honey or split and toasted with garlic butter. I think it will make a great base for creating variations. Quick and easy to make.
