Quinoa and Black Beans
This is s.e.r.i.o.u.s.l.y. amazing! I tried it after reading many of the glowing reviews (of which I was highly skeptical). But it is very easy to prepare and the results are incredible. Please try this, you won't be sorry. Don't leave out a thing! I almost left out the corn, thinking it wouldn't be missed. Instead I ran to the store and grabbed a bag of frozen kernels. The corn imparts a delicate sweetness and a little pop when you bite into it. I love to eat this dish with a heaping dollop of plain greek style yogurt, green onions, cilantro and bit of finely minced hot pepper (a red one is especially pretty) Thank you thank you thank you for sharing this fabulous recipe.

Oven-Roasted Asparagus
Wow! This was amazing, I will make this recipe as often as possible. I used a lot less salt, 1/2 tsp but I think I will only use 1/4 tsp next time and see how that tastes. I drizzled a little olive oil on the asparagus so probably only used 1 Tbl. I used ALL the optional stuff...not an option to leave them out! Seriously! When the asparagus was ready I ate them on a wrap with just a little mayo and some mixed greens. Soooo good! But I couldn't keep away from it and ate the rest with my fingers. lol You simply have to try this recipe. :)

Annie's Fruit Salsa and Cinnamon Chips
I have to tell you that I'm not much of a cook but I took this to an office potluck and people freaked out! They asked me how to make it, they wanted the recipe, they wanted to know where I 'bought' the chips and were floored when I said I made them. I'm so thrilled with this recipe. What a simple tasty dish with an original flair. I guarantee no one else will have this at your next get-together. I followed the recipe closely but omitted the sugars in the salsa as I thought there would be plenty of sweetness with the cinnamon chips. I forgot to buy butter spray so I brushed on melted butter to each chip before sprinkling the cinnamon and sugar on top. I used a pizza cutter on the tortillas thanks to another reviewers suggestion and that worked perfectly. Based on other suggestions I made sure to take the time to cut everything very small and used strawberry preserves. My only mild complaint was that this took me forever to make. Who knew such a simple recipe would take so long. At first I was like, Oh this is soooo much fun...an hour into it, not so much. lol. Oh and btw, I had a few tortillas left to bake and no more melted butter, so I just sprinkled them with water so that the cinnamon and sugar would adhere and they turned out fantastic. Lastly, I baked a flour tortilla in a oven proof bowl so that I could serve the fruit salsa in it. That was another spectacular suggestion. Thank you for the recipe and thank you all for the wonderful suggestions. Love this site!
