Portuguese Bean Soup I

Delicious!! I was very pleasantly surprised- I wasn't expecting such full on flavour, at least more than just spicy, but it was very flavourful. The spice was not overpowering. I did change the recipe slightly to fit what I had on hand- I did not add celery, and the spice I used was a paprika/cayenne mix. I also added crushed chilies. I cooked the chorizo on a grill pan which added a nice 'grilled' smokey flavour. Was not an expensive meal either, and easy to make, so this will become part of my normal rotation!

Grilled Salmon I

Delicious! It complements the salmon perfectly- I was never a salmon fan, but this recipe has converted me! The seasonings and the marinade are tasty, and the saltiness of the soy sauce counters the fish and makes the salmon taste a bit sweet. The only thing I did was to completely leave out the salt, and I used olive oil instead of vegetable. Will make again and again!

Hasselback Potatoes

Delicious! I used olive oil instead of butter, and omitted the parmesan simply because I didn't have any. I put salt, pepper, and garlic on the potato prior to baking, and it came out perfect. Will never make a baked potato any otherway!

Delicious Ham and Potato Soup

Perfect! I couldn't ask for a better soup, it's incredibly delicious! I agree that it tastes like restaurant quality. I only made minor adjustments to suit my tastes and what I had on hand- I used vegetable bouillon instead of chicken, and I also added carrots and increased the amount of potatoes. This is definitely a keeper and now that winter's coming, I think I'll be making this a lot! It's also a very inexpensive meal that will either provide lots of left overs or feed lots of people. Thank you!

Downeast Maine Pumpkin Bread

Love this recipe!! It's very easy to make and comes out delicious. I only made a few adjustments- I added a dash of vanilla extract, upped the amount of spices, and added a handful of dried cranberries to one of the loaves. Perfect!

Delicious Black Bean Burritos

Absolutely delicious! I added chili powder, cumin, a few drops of Tabasco, and a pinch of oregano. I also added 2 tablespoons of salsa. Served over rice with a tortilla on the side, as mine came out fairly saucy. Fantastic, will definitely be a staple around here!

Good Old Fashioned Pancakes

Pretty good, very tasty and easy! I did follow the directions and the tip to refrigerate the batter for 30 minutes. Wasn't quite as fluffy as we like, but still a definite keeper.

Mexican Rice II

Very good! Tastes just like the restaurant rice, thank you for posting!! I did make a few adjustments in the hopes of making it slightly healthier. I did not cook the rice in oil- I just put the uncooked rice in the tomato sauce, chicken broth, minced garlic, chopped onion, and spices together. The rice soaked up the liquids very nicely. Once the rice was pretty much done, I added chopped green bell pepper, and let it sit in the steaming rice to cook a bit. Fantastic!

Chewy Granola Bars

Fantastic! These are so tasty, easy to make and do not fall apart as some have suggested. I also love the fact that the base recipe is so versatile, and because of this I did make a few changes. I halved the recipe and used a great deal less butter, only about a table spoon. I used a bit more honey and compensated the butter by adding applesauce, which turned out wonderfully. I also added a bit of cinnamon and chocolate chips. Great recipe, and I can't wait to try more variations!

Baked Tortilla Chips

Great! I only had flour tortillas on hand and my first batch initially burned- the different tortillas must need different times and temps. For flour tortillas I baked them for about 6 minutes at about 300F and they turned out much better. I will try with corn tortillas next time, thank you!

Spicy Red Bell Pepper Soup

Delicious! Great soup recipe, and fantastically easy! It blends up really nice and is nice and spicy. I will give it five stars, but I did have to alter it slightly to fit the ingredients I had. First, I halved the recipe, which still made lots of soup. I also used two (small) red peppers and two (small) yellow peppers. Next time I will make sure to make it with only red peppers, though the yellow peppers taste nice, the soup turns out mostly yellow. I also didn’t have garlic cloves, so I used garlic powder in their stead. I also substituted chilli powder for the cayenne pepper, and it doesn’t overpower the soup either. Thanks!

Quick Black Beans and Rice

Fantastic! I followed the basic ingreients and method, but I didn't have any garlic unfortunately. I also used Extra virgin olive oil instead of vegetable oil and added chopped jalapenos. I like it spicy so I added more oregano, chilli powder, cumin and some crushed red pepper flakes. While cooking the rice, I only added a bit of water to get it started about half way, and then I added the patially cooked rice to the beans and tomato mixture. The rice absorbed the liquid nicely but it also left some sauce too. Perfect, will definitely going to make this often! I think it would be good to add a little bit of bacon, chicken or shrimp too! Great sauce!! I didn't feel that the chicken really did anything much to add to the taste, although I tried it a second time with a few pepperoni slices mixed in and that was fantastic!

Yummy Pikelets

These are good and really easy! My one complaint is that mine turned out a bit tough, not really fluffy. They weren't really rubbery, just tougher than I thought they'd be. That could be my fault because I did have to substitute olive oil spread for butter and cane sugar for caster sugar. Over all, the taste is really nice, so I will definitely make these again.
