Pear Bread II

This recipe was lovely. For the flour I substituted half the amount with whole wheat, and I used applesauce for the oil. I made one loaf and baked the rest of the batter as muffins, and they were perfectly moist and very, very tasty. I thought they were a tad sweet, but that is probably because of the applesauce; I'll try to take that into account next time. They smell wonderful while baking! Overall, excellent recipe!

Whole Wheat Apple Pancakes with Brown Sugar Glaze

This looked like a lovely recipe, but there was WAY too much baking powder. I would say use half the required amount at most. Otherwise, though, they were great, and with a modification or two I would probably make these again.

Berry-Blue Corn Muffins

These muffins are great. I've made a couple of different blueberry corn muffin recipes, and this was just what I wanted. The corn flavor isn't overpowering, and the amount of blueberries called for is perfect. Also, the vanilla adds the depth of flavor that I was looking for in these muffins, and they're very moist. Thanks for the recipe!

Dutch Apple Berry Pie

This pie was perfect! The only thing I did differently was use half oats in the topping because I like the texture, and it was fabulous! When it first came out of the oven, it looked like the filling would be too juicy, but as it cooled it solidified some, and the taste was amazing! I made this last night and by this morning it was almost gone. I will definitely make it again and again. Thank you so much for the wonderful recipe!

Banana Blueberry Muffins

These muffins turned out very dense for me. The batter looked really thick as I was mixing it, and I had to add 2 T. oil to get it to come together...they were okay, but lacked overall flavor. They still taste okay, just not great.

Peanut Butter Banana Muffins

These are okay tasting, but to me they are a little too bland. It just seems like they're missing a little something. I added about 1/4 tsp cinnamon, and a pinch each of nutmeg and salt, but that didn't make much of a difference. They seem to lack substance to me; I may try increasing the peanut butter next time.

Playgroup Granola Bars

This is a great recipe! I am always looking for healthy recipes to try, and this is the first granola bar recipe that I have been truly happy with. It's so easy to midify! They are a little sweet for me, however. I've made these twice, and the second time was my favorite so far: I substituted applesauce for half the oil, used 5-grain hot cereal for the oatmeal, whole wheat flour for all purpose, cornmeal for the wheat germ (didn't have any), added only about a third of the sugar called for, and used only 1 tsp of vanilla. I found that the first time I made them, the vanilla came through a little too strong, but that could have been because I used all applesauce in place of oil and didn't add the brown sugar. I also found that when using applesauce, if you like a crispier bar like I do, it's best to bake it for 5-10 minutes more than the recipe says. Overall, though, this recipe is awesome, exactly what I was looking for! Thanks!
