Butternut Squash Bake

I have already made this 4 or 5 times and it's always a hit. super easy and really really delicious! i use goat cheese instead of blue cheese and whatever herbs i feel like throwing there [rosemary is my fav] and it's just perfect. great for potlucks, holiday meals or any dinner [though the prep/cook time is a bit long]! =)

Pork Chops and Kraut

This turned out delicious. I was out of caraway seeds [which i know would've made it stellar] but followed the recipe pretty closely, except that i drained half of the liquid before adding half of the flour and half the sour cream. I think if i would've used the correct amounts it may have ended up a bit too soupy...though i'm sure it still would've tasted great. Nice recipe...will make it again!

Surprise South Beach Mashed 'Potatoes'

honestly, without having this side-by-side with mashed potatoes, it is quite satisfying. i added a bit of italian seasoning to mine [just as i do to regular mashed potatoes]. i'd also like to mention that if you are careful not to over-steam the cauliflower, and don't over-puree it, the consistency is a bit heavier, like potatoes.

Rempel Family Meatloaf

Very easy recipe and it came out delicious! The second time i made it i used ground turkey and because of the ketchup and steak sauce, no one could tell the difference! I also made it into mini meat loafs in a large cup cake pan and cooked it only 40 minutes. I intended on freezing a couple for later but there was none left!

Spinach and Feta Turkey Burgers

these were a huge hit...definitely didn't need a bun or condiments! i had some fresh spinach so i cooked that instead of using the frozen kind and i added some onions for a little extra flavor. the burgers were a "drippy" so a baked them in the oven first for about 10 minutes on 400 to keep them from falling apart on the grill. i will definitely make these again!

Portobello Mushroom Burgers

I ended up pan frying the the caps instead of grilling them so they weren't as "crispy" but the marinade was fantastic. I put the caps on fresh toasted sourdough with cheese. a slathering of fresh made guacamole and a think slice of tomato and i was amazing.

Baked Spaghetti Squash with Beef and Veggies

Huge success in my house! I did substitute ground turkey for the beef and it came out really good. i was a little wary of adding so much cheese but once it came out of the oven, the flavors all mixed together perfectly. Will absolutely make this again!

Zucchini Tomato Toss

Wonderful and simple recipe. I used apple cider vinegar which i think may have made it a little bitter but the sugar cut the acidity nicely. I also added fresh cilantro and a bit of fresh dill.

Curried Honey Mustard Chicken

This came out really wonderful. We ended up broiling the chicken for about 3 minutes on each side [after the initial 20 minutes] and it gave it a nice crispiness. I really liked that the flavor wasn't too overpowering but then again we only marinated the chicken for about an hour. Will definitely make this again.

this recipes was a HUGE hit. everyone was a little weirded out when i told them what i was making but they quickly changed their minds once they started eating. i did half with hebrew national and the other half with veggie dogs and they both came out delicious!

Broccoli Soup II

this was quick to make and turned out pretty yummy.i pretty much followed the recipe exactly except i added about 3 tbsp of parmesan cheese. the soup ended up being a little too thick so i added about a cup of milk while it was still in the food processor. i also set aside about 1/2 a cup of the cooked broccoli to add to stir in before serving.

Zucchini Alfredo

very simple and yummy base recipe but i do agree with a few others that something is lacking. i followed the recipe and added Italian seasoning, about a half cup of shredded mozzarella and some fresh ground black pepper. also, even though i only made 3/4 of the bag of pasta i still needed to add about a quarter more cream cheese and a quarter more milk.

quick and easy recipe. following the advice of others, i cut down the amount of onions by about half and i think it was definitely an improvement. i also added a little but of fresh cilantro [for color] and a little bit of feta on top [instead of salt]. will definitely make this again!

Fabulous Cilantro Pesto

This came out really well though i have to say, i couldn't tell that there was cilantro in it [instead of the usual basil]. I did change it a bit. I didn't have any white wine vinegar so i used red and added a couple of squirts of lemon juice. The large [more than normal] amount of garlic made it delightfully spicy. Also, when i mixed the pesto with the pasta, i added one finely chopped tomato and 1/4 of a bell pepper and it gave the final dish a little more texture and freshness.

Tofu Masala

This came out really tasty! I used chicken broth instead of water and simmered it for 20 minutes to thicken the liquid a little more. I also ended up adding a bit of extra cumin, cinnamon, bay leaf and ginger, because i only had 1 tbsp. of garam masala. It was a big hit, very flavorful and pleasantly spicy (with a little bit of extra pepper)! Was great served over plain white rice!

Cheesy Brat Stew for the Slow Cooker

Good idea though i have to say i strayed a bit from the recipe by adding some leftovers. i added left over rice and broccoli. i didn't feel there was enough water to cook the potatoes so i added a cup instead of a third of a cup. It came out good though 3 hours was definitely NOT long enough to cook the potatoes. Even with the extra water, it took closer to 5 hours to get them tender!
