Ukrainian Red Borscht Soup

This is a very good borsch recipe. I omit the sausage completely, and cut down the amount of garlic. To the poster that commented on borsch always having meat - actually, in Ukraine during Lent there is a Lenten menu available in almost every restaurant with vegetarian meals listed. It's common to not eat meat, at least on Fridays (though many avoid meat the entire 40 days), during Lent there. So, vegetarian borsch is quite common at this time of year. Otherwise, all borsch I came across while living there included beef, not pork sausage.

Lemon Cranberry Muffins

Really good. I followed the advice of other reviewers and added lemon juice and lemon zest. Very tasty. I used fresh cranberries and didn't think to test them for tartness before adding them in to the mix. They were very tart, making the overall muffin too sour for my taste. No problem, I just whipped up a quick lemon glaze with lemon juice and powdered sugar and they were absolutely perfect! Even my kids loved them.

Home Made Farmer's Cheese

People, read the reviews on this one! The advice by another poster helped me make perfect cheese the very first time with this recipe. Make sure you measure your lemon juice (1/4 cup to a gallon of milk) and use a thermometer. Letting it rest the full ten minutes is important. Also, every time I have made this (and I now use this recipe all the time to make ricotta cheese but also to make syrnyky and blintzes) I have had to reheat the milk mixture to get the full amount of cheese. Remember, until you only see yellow whey left behind, you still have milk solids that, if reheated, will become cheese! Strain it once and if your liquid is still milky white, reheat and add more lemon juice and it will all turn into cheese.
