Pumpkin Bread IV

First of all, I am not reviewing my variation of this recipe that may or may not resemble the original, my reviews are always on the recipe as written. As written this is one of the best pumpkin breads I've had. It's sweet but not excessively so, very soft, and almost perfectly spiced. Made in loaf or muffin form it's yummy, especially the day after you make it. Having made this recipe several times the past couple of years, both the recipe as written, and with some tweaks there are some changes I make that result in a five star recipe. You will note that I rated the recipe as written four stars. The four cups of sugar is excessive. I've been reducing the sugar a little bit since the second time I made this. At three cups this is still very yummy, and I prefer the level of sweetness. While I always recommend making a recipe as written the first time, ESPECIALLY if you intend to review it, this is improved with less sugar. Additionally, I now make this with an extra half cup of pumpkin, not only is this more convenient, but the bread is denser and I find the flavor to be a bit better. I have tried this 1 cup of oil and 1/2 cup of applesauce. The taste of the bread was unchanged but I'm not a fan of the sticky moistness that resulted on the top of the bread. Also, I find that adding 1/4 - 1/2 tsp more cloves than called for really elevates the flavor of this bread.

Best Bread Machine Bread

Best bread to ever come out of my bread machine! Following this recipe to the letter I get good tasting white bread that rises beautifully, and needs no adjustments. If you have a breadmaker this recipe is a must.

Colombian Lentils

As written, one star. After adding about four more cups of water than called for in the recipe and cooking for about another 30-45 min to avoid partially raw potatoes, this was finally done. This smells great while cooking but the taste is bland to the extreme. Some recipes are worth "fixing" to your liking, this isn't one of them.

Poppy Seed Muffins

I followed the recipe as written. These are so sweet they're gross and texture is so light that it doesn't seem very muffiny. I haven't tried it with any of the adjustments listed in other reviews, but as written these aren't good muffins.

Sweet, Sticky and Spicy Chicken

The first time I made this I followed the recipe, substituting ground ginger for the fresh, as that's what I had, and lessening the amount of chicken. It was easy to make and very yummy! I have made a few changes to how I make this now, and my husband loves those even more than the original. When cooking for the two of us I use 1 large chicken breast and coat the pieces in a mixture of flour, wheat germ, ground ginger, and red pepper. It adds a little more heat, makes the chicken brown beautifully and helps the sauce thicken. After the chicken is browned I throw frozen baby sugar peas into the pan and let them cook for about a minute before adding the sauce. When mixing the sauce I increase the honey to 3 tbs, and I have no issue with the sauce thickening correctly. If you're making this for 4 I would suggest increasing the sauce by at least 50% and the honey by 100%.

Farm Macaroons

I started by following the recipe as written, minus a little suger since I was using sweetened coconut. After I had combined everything it was very obvious that there was far to little coconut for this to make macaroons so I added about another cup and a half of coconut. It still looked a little to meringue cookie instead of macaroon but I gave it a try. The first batch I left in a little over the 20 min. because it wasn't browning. When I took them out I had a crisp meringue cookie with a bit of chewy coconut in the middle. The second batch I took out before they crisped and ended up with slightly undercooked meringue cookie that was reminisent of a macaroon. As a meringue cookie with some coconut I would rate this 3 stars, because it was ok, just not great even if you aren't wanting macaroons. If you want macaroons this recipe would have negative stars. I gave it 2 stars because they are ok cookies but they dont' come close to chewy, slightly sticky, toasted coconut delight that is a real macaroon.

Creamy Pear Pie

Wonderful! My husband and I don't really like pie but this was great. I had my pear slices soaking in lemon juice so they wouldn't brown so I didn't use the lemon extract. Only change and this was great. I'll definately make it again.

Lime Chicken Soft Tacos

I made this recepie the other night and it was great! As it is it's probably a very good 4 star, make often and love recipe. I made a few changes and the next time I make it (which will be soon) I'm going to make a couple of more. I love garlic so I doubled that. I didn't have any red wine vinegar on hand so I used apple cider. Tasted so great I'm using it every time. I also cut down the oregano and added a bit of chili pepper. Next time I'm going to marinate this for about 30 min before cooking and increase the chilli and green onions. Cooking this a crock pot would also be a good idea. Without a marinade or crock pot this is good but the flavor isn't enough to get 5 stars. Overall great recipe and a must try.
