Fiesta Fry Pan Dinner

I love this recipe as a base. I make a lot of changes though. No onion, no zucchini, Ro*Tel instead of stewed tomatoes, canned corn instead of frozen, and black olives. Absolutely delicous. We enjoy it with sour cream. MMMmm

Pizza Casserole

I never know how to rate a recipe since I ALWAYS make changes. With my changes this was definitely a five star dish. I used rotini instead of egg noodles, ground sausage instead of turkey, no onion (No one here likes them), added black olives and mushrooms and a bit more pizza sauce so it wouldn't be too dry. Fabulous dish. Everyone LOVED it!

Mint Chocolate Chip Cookies

Yum! I made these exactly as the recipe says except I added a few more drops of food coloring for extra green cookies. They tasted great! The only problem I faced was slight sticking to the cookie sheet. Some of them looked funny but they tasted the same. My Husband took some to work with him and one of his employees requested the recipe!

Festive Shortbread Logs

These are DELICIOUS! Tasty cookies and super easy to make. Shaping them took a little time but it was totally worth it. I made them for our Christmas party and the recipe was requested. Excellent cookie!

Buffet Scrambled Eggs

I tried this and I have to say it doesn't taste anything like any Buffet Eggs I've ever had. It just wasn't my thing. I could taste the flour too well. My son seemed to like it though.

Chicken Enchilada Soup I

First thing I have to say is that I NEVER follow a recipe exactly. I’m always adding or subtracting. I can’t give stars on the original recipe but the version I made is definitely five stars. I had no cumin so I didn’t add it but I did add some chili powder and a bit of taco seasoning. I cooked the broth and the strips in the pot and then added the red sauce, green sauce, milk (didn’t have half and half) and then I also added a can of Ro-Tel (Diced tomatoes and green chilies) and another small can of green chilies. I cooked it until it was heated but it seemed too soupy to me so I tore up a few more (maybe 6?) tortillas and threw them in and let them get soft. (I loved the tortillas pieces when I ate it.) I also added about a cup of the shredded cheese into the soup and let it melt. I dropped a dollop of sour cream in a bowl, spooned the soup over top and served it with some homemade corn chips. Excellent! My three year old had seconds! Also, it made a whole lot more than four servings.

Pecan Pie

This recipe was so easy and really tasted great. I made it for Thanksgiving and everyone loved it. I had one person ask if he could keep the pie that was leftover (which wasn’t much!) The only thing I changed was that I used light corn syrup instead of dark and I chopped the pecans (just with a knife, a rough chop) and folded them into the egg mixture. Also the pie was done after 45-50 minutes, so make sure you keep an eye on it!
