Quick and Easy Green Chile Chicken Enchilada Casserole

I used whole wheat tortillas and after I toasted and baked them, I needed a steak knife to cut into them. I also made it using onions, pepper & garlic and mixed the sauce and sour cream right in with everything and added cumin. I think I needed more sauce but the flavor was pretty good.

Chicken in Creamy Pan Sauce

I made this with onions, some italian seasonings, a little extra cream cheese, and a small chicken bullion cube. It was ok, next time I will make it with garlic and see if that taste better.

Avocado Smoothie

OMG Avocado smoothie! If you like the taste of avocados on their own, you will love this smoothies. But I gave it four stars because you have to use half the yogurt and 3/4 the milk. Add the honey to taste. Some like it sweeter than others.

White Chocolate Sour Cream Frosting

This recipe is more like a glaze like another reviewer said. I followed their directions to wait until both are room temp and added the chocolate to the sour cream slowly. I also added about 1 cup of powered sugar and tablespoon of vanilla. This was pretty runny. I even put it in the fridge for a half hour and its still runny. Not sure what I did wrong but it tastes good.

Maple Salmon

I've made this twice. The second time I made it, I did not double the sauce and it cooked into a thicker glazy sauce which was WAY more tasty than the thinner sauce I got when I made it the first time.

Marinated Baked Pork Chops

IF YOU USE BONELESS pork chops, only cook for 20-30 minutes MAX! I had four boneless pork chops (thick cut but not too thick) and I cooked them for 30 minutes at 375 and that was too much. I doubled the recipe for the sauce and marinated it for about an hour. It tasted great except for the pork being over done.

Kale Soup

I just made this soup and it tastes fantastic. The only thing I did different was I used all beef broth instead of water and I used Al Fresco's Chirizo and Al Fresco's Sweet Italian Sausage instead of pork. I also added a can of diced tomatoes and I did not add the hot peppers. This healthy soup will be my dinner tonight and lunch all week.

Simple Peanut Butter Banana Bread

I made these as muffins with 3/4 cup of mini chocolate chips. Tasted great! I didn't have buttermilk so I used three tablespoons of yogurt and one tablespoon of milk and mixed it together. I used butter instead of shortening. I also used two normal sized bananas to keep them moist and one teaspoon of vanilla. They filled the muffin hole to the top so I cooked them for 24 minutes at 350. The second time I made these, I used applesauce instead of butter, added a teaspoon of cinnamon and half a teaspoon of nutmeg and cooked them for 20 minutes at 350. They were perfect!

Easy Meatloaf

Cake Balls

This recipe is delicious but extremely time consuming and a huge pain in the tush! Also, I couldn't even get a tooth pick to stay on while I was dipping it so I can't imagine them staying on a pop stick. The time and effort is why I will never make them again.

No Guilt Spiced Mixed Nuts

Overall these are really good and easy to make. I used real organic sugar instead of sugar substitute. You have to mix the egg whites and sugar really well. I rated these a 4 because the cumin flavor is a little over whelming. Next time I will try 1 teaspoon instead of two. Also they are more sweet then spicy.

Authentic German Potato Salad

This is a great recipe! More bacon, more bacon, more bacon!!! Also, use half the sugar. The next day, I pan fried it to make home fries and ate it with eggs.

Sweet Russian Cabbage Soup

Awesome soup for a picky pregnant woman. I made it with 1 pound of beef, one extra beef bullion, 1/4 cup of sugar and 1/4 cup of white vinegar. I also used organic cabbage because you can taste the difference but it's a smaller head. Fantastic!
