Little French Fudge Cakes

These were so rich and so good. I assumed they would be similar to a Ghirardelli brownie in cupcake form, but somehow they were richer and denser (in a good way)! I did eat one right after baking and I can honestly say that I liked them better when they were completely cooled and solidified the next day. I put a thin layer of dark chocolate buttercream on them and this only enhanced the experience. The one change I would make is to leave the cinnamon out completely. I even halved it when I made mine and I still did not like the spice in combination with the chocolate. Also, for the non-melted bittersweet chocolate chunks I just used a half cup of semi-sweet chocolate chips I had on hand. They worked fine, not need to go out and buy 2 expensive chocolate bars. Just one good bittersweet chocolate bar for the melted portion of the recipe will do.

Cake Balls

I was very disappointed in the result. I made two batches for Christmas. One with a butter yellow cake, cream cheese frosting and vanilla candy coating dip. The other was a dark chocolate cake mix with coconut pecan frosting (German chocolate frosting) dipped in semi-sweet chocolate. In the end I had a lot of mediocre balls on my hands. Dipping anything is a lot of work. I wished I had made the Oreo Truffles or Buckeyes instead.

Best Big, Fat, Chewy Chocolate Chip Cookie

This is the only chocolate chip cookie recipe I use. I have modified it to my tastes to make it even better. First, reduce the butter by 2 tablespoons, otherwise they spread too much and are a tad greasy. Second, reduce the white sugar to 1/4 cup as they are very sweet and you can cut down the sugar w/o affecting the product. Third, I use white whole wheat flour and I think it improves the taste. Finally, I always chill the dough for at least and hour to get a fat thick cookie, but if you don't have the time, this step is not essential. I love using mini M&M's with this recipe. I will never use another chocolate chip recipe again!

Fudge-Nut Oatmeal Bars

These are awesome! I wanted a bar, because bars are easy, and something with oats so I can pretend they are healthy. These bars fit the bill and were so delicious. I added about four tablespoons of ground flax seed to the cookie base to increase the health factor, halved the recipe and baked in a 9X9. The result was a thick rich bar.
