Easy Chinese Corn Soup

I was concerned how healthy a can of creamed corn is so instead I took out fresh corn that I froze from the summer garden. I added broth, a small amount of ground pork after cooking and draining the fat, and followed the rest. Fabulous. I am freezing more corn next summer just so I can have it in recipes like this in the winter.

Restaurant Style Egg Drop Soup

This was perfect! I did follow other suggestions by adding green onions, white pepper, and a splash of soy sauce. I also whisked 3 whole eggs with a tablespoon of water. I could have done better with adding the egg at a slower rate as I did have some chunks but else it was perfect. This has been added to my recipe box!

Chicken with Blueberry Sauce

excellent recipe. I followed as directed and thought the vinegar amt was fine. I used spicy brown mustard and red rasberry preserve as I did not have the other. Easy to make. This is a keeper.

Parmesan Chicken

The other suggestions were great. I added fresh garlic to the egg mix. Extra herbs to the Italian bread crumbs, montreal steak seasoning, Cayenne pepper for spice, and Parmesan cheese. Next time I will tone it down since I could not taste the cheese. I baked it but was not getting as brown as I like so I topped off under the broiler. I paired it with pasta shells and alfredo and added parmesan and blue cheese to the pasta. Wow...fabulous combo between the chicken and pasta. Next time I plan on making a blue cheese sauce to drizzel over the chicken and substituting the pasta with a veggie. Great recipe!

Broccoli Cheese Soup

Another Excellent soup. Due to a wisdom tooth pulled, had to make modifications. I cooked the broth and frozen plus fresh broccoli in one pot. In the other I cooked diced onion in white wine and added black peper and crushed garlic the last few minutes. I then added a tablespoon of flour to the onion to serve as my thichening agent. Then added the broth and broccoli mix, boil slightly to thicken then pureed with my immersable blender. Added some processed cheese and sharp cheddar, fat free milk. It turned out fabulous. The broccoli flavor very pronounced. My BF ate just about the whole pot. No left overs here. This is a keeper!

Baked Potato Soup

EXCELLENT! One of my best soups. I had to modify due to a pulled tooth. I cooked diced potatoes in the broth. I added fresh spices from the garden rather than dryed. I had to give up on the bacon but added a spoonful of bacon fat for flavor. I tickened with cornstarch. Had no cream so used fat free milk and sour cream instead. Also added celery seed. It even tasted great cold. Can't wait for winter to make it more robust and no tooth problem. I think even if followed exactly, it would have been great pureed. Absolute keeper. Love the other reccommendations too. GREAT recipe!

Bratwurst, Sauerkraut and Bean Casserole

I made this grilling the sausage for 2 minutes then baked as instructed. It was fabulous. The touch of brown sugar made all the difference. This will be the only way I eat sausage and kraut in the future!

Mama's Italian Wedding Soup

I decide to brown the meatballs lightly before putting in the soup and I am glad I did. Got rid of some of the fat and they held together well. I really liked the addition of the carrotts. My soup was such a hit that everyone had two bowls. This one is a keeper. Fun to make and great tasting.

Creamed Spinach with Onions and Bacon

I thought this was great. I was not crazy about the bacon so I think next time I will use it as a topper rather than part of the dish. I used fresh spinach rather than frozen. Fresh garlic rather than powder. I also added fresh grated parmesan cheese just before serving. I also would have liked it more creamer so I will experiment with that next time.
