Rum-Spiked Horchata

This drink is very nice. It has a flavour that is reminiscent of coconut perhaps, reminds you of an Island drink which is nice when it's a snowy cold day outside! We had this without the rhum. We will be using the rice to make a hot rice pudding. Thank you for the recipe.

Budget Berry Jam

This is a geat recipe! My family of 8 goes through a jar of jam a sitting ....or almost, and it has become very expensive. The kids are not very picky when it comes to anything sweet so they really enjoyed the jam, not to say that it isn't good, because it is remarkeably tasty, but obviously it is what it is-not the real thing(can anything beat homemade raspberry/strawberry jam with chunks of fruit?). I did fool a lot of people who thought that it was authentic. I cut the sugar by LESS than half and it was still very sweet. I have tried this with every variety of gelatin and the berries are the best in my opinion. I sometimes throw in a hand of sliced real berries to give even more of an effect. I will be using this recipe again! Thanks!

Caesar Salad Supreme

I made this exactly as directed.My family prefers a ceasar with fresh beaten eggs and a little more lemony flavour. This recipe is very rich more so than the kind made from scratch (somewhat like the Renee's brand)and the quantity of ''sauce'' is more than you'll need for 1 head of romaine, you could probably generously cover 2 medium heads. We also found that it was a little over the top in the garlic department , BUT I used fresh-from-the-garden garlic that is flavourful and juicy, so it could be that. I won't make this again as it is written, just too rich and too garlicky.

Baba Ghanoush

Very happy with this recipe. I think the blackening of the eggplant does give it that smoky flavour that our household enjoys. This is a lovely low calorie, healthy dip and spread, we use it on falafel sometimes for a different taste. I would recommend this as a great base recipe that you can tweak according to your own taste. Some like more garlic, some less, some like lemon, some less...

Spaghetti With Red Clam Sauce

For our family of seafood lovers, this didn't not have enough clam flavour...so as I made it I altered adding more clams, more cappers, a little wine, more garlic. It was okay but I won't make it again.

Thai-Style Tilapia

While I did not follow this recipe, but mostly got inspired by it, I did combine the onions and coconut milk (I used hot Berber spice, curry, dried ginger,lemon juice and a handful of flaked coconut at the end) and simmered the fish. This was something that I never do with fish(usually always flour and pan fry). The whole family from my 3 year old to my 13 year old, enjoyed it and ate everything up, no leftovers. And the most incredible thing was that I did it with frozen fillets (I was in a jam) and still it was lovely. Thanks for the inspiration!

Vinegar Taffy

I have made candies and taffies before but even after 2 attempts, this candy ''globs'' together. The second attempt I brought it up to hard ball stage to try and get it to harden , still a giant glob was found the next day...I used pure cane sugar. I am at a loss. This is December in Canada weather can't explain the results either.... The 2 stars is for the taste that is lovely (tangy like citrus candy) just like candies from my childhood.

Apple Crisp II

This is a very simple and quick recipe. Nice texture to the crumble. I have never poured water in a crisp before, so I was curious. It prevented the apples from drying out, however it created a sauce like bottom (perhaps the type of apple used), which was not what I was hoping for -I prefer pieces of apples to bite into. Also for my personal taste I found this quite a bit too sweet. My husband thought it was a little too sweet as well. But it is a good basic recipe and I will adjust it for our preferences.

Lover's Beef Burgundy Filet

We found the taste of the marinade too salty and we found it overpowered the meat's flavour altogether even if we are usually pretty big on salty foods. The flavour of the marinade didn't really please us either, we couldn't really taste the wine. Perhaps using these ingredients in smaller quantities would be pleasing. The meat was obviously tender, but then again, if you are eating filet mignon, it should be.

Dutch Babies II

The secret to success is indeed warmed milk and warmed eggs. Like the other reviewer , I zapped the milk for 30 seconds in the microwave while I let the eggs warm in hot tap water. I have used duck and goose eggs with this recipe for even more spectacular results! I could see using this as a "crust" for spinach or asparagus and cheese and I have rhubarb that I am going to compote and use as filling.Thank you for the recipe.

Carrot Cake III

For our family, this cake was simply too oily. The taste of the fat overwhelmed the whole thing and the carrot flavour was masked. I would never make this again or I would scale way back on the oil, we found it tasted oily. Because of the addition of carrots usually less oil fat is required to make a cake moist. This recipe calls for more than half of the flour quantity in oil-I should have known better. I think that the reviewers who used applesauce probably had better success. Thank you for sharing anyway.

German Red Cabbage

Very good proportions of spices! This side dish is a staple of Fall for my European in-laws.I added homegrown/homesmoked cooked bacon....mmmm...The only thing that I will change next time is that I will add less water as I found it had a little too much. Thanks!
