Cream Cheese Frosting II

This was delicious, but it wasnt a frosting consistancy. It also tasted more like cheese cake than frosting. I added more powdered sugar to make it sweeter for the family's taste.

Dark Chocolate Cake I

Made it with coffee in place of water. It was very good and very rich. Next time I will serve it with just some whipped cream or a sprinkle of powdered sugar instead of icing. I made this in a non stick bundt pan, sprayed with pam and dusted with cocoa powder and some still stuck. next time I will use butter or Crisco instead of the spray.

Red Velvet Cake I

This cake is lovely as is - mine was not dry at all. I did see a possible error in the recipe that may account for the issue: other red velvet cake recipes call for SIFTED flour rather than flour, sifted. Sifting "fluffs" up the flour so that it measures differently. If you are measuring 2.5 cups flour and THEN sifting, you are probably using too much flour. Sift the flour first, then gently measure out 2.5 cups. Also, for those of you who like cream cheese icing, I found this same icing recipe on the back of my cake flour box with a note that you could use 2 sticks (1c) butter OR 1 stick (1/2c) butter + 8oz cream cheese. I haven't tried it, but it might be a nice compromise between the "traditional" and the cream cheese frostings. I personally prefer the one included in this recipe - it is so light and fluffy and delicious.

Pecan Pie Muffins

These are really delicious. I am on a low sugar diet, so I substituted splenda for 1/2 the brown sugar (1/2c brown sugar, 1/2 c splenda, + 1/4 c. non fat milk powder to make up for the lost volume). I was afraid that these would not be very good with my alterations, but they were great!

Frogmore Stew

There are only two of us and my stockpot is only 12qts, so I just used what I had on hand: 1.5 lb shrimp, about 2 lbs potatoes, a pack of bratworst, and 3 ears corn. I used about 3 quarts of water + 2 cans of beer and threw a vidalia onion cut in half in at the beginning. Since my bf doesn't like a lot of old bay, but we do like things spicy, I used 1 zatarain's crab boil bag and 1/4 cup old bay. This may be too much spice for some, but it was perfect for us. Since I was using raw sausage, I browned them on the outside, then cut into thirds and added with the potatoes. Next time I will probably sub the little frozen corn on the cobs, since it was hard to cut through the corn cobs.

Baked Ziti I

Awesome. I used a pack of italian sausage in the sauce, then added the sauce mixture to the pasta. I also used 15oz ricotta + 8 oz sour cream instead of the amount of sour cream called for. My boyfriend loved it, too.

Orange Fluff I

This was pretty good. I made it with ricotta instead of cottage cheese, because of the texture. The ricotta made it a little grainy, but not lumpy.

White Bean Chicken Chili

I could not find canned tomatillos, so I used a jar of salsa verde instead, as suggested by other reviewers. Also, I did not have any chicken already cooked, so I used cubed raw chicken and allowed the chicken, broth, tomato, green chiles, & spices mixture to simmer until the chicken was tender. This made a nice hearty chili - not much broth. Since I prefer it thinner, I added another can of broth and doubled the spices at the end, but the taste was great before I made those alterations. Loved the chili. I will note that I was unsure of the addition of the salsa verde, so I waited until the recipe called for the addition of the corn/beans until I added it. Tasted before and after and I really think the salsa made this recipe. The flavor was excellent prior to the addition, but had no "kick." Might only rate 4 stars as written since I think the canned tomatillos are probably not as flavorful as the salsa verde, but since my grocery doesn't carry them... Thanks for the recipe!

African Chicken Stew

Very good. Made the following substitutions: Used one sweet potato and one regular potato. Also cut the PB to 1/2 cup as suggested in other reviews. May still reduce further next time. Cut red pepper flake in 1/2 to reduce heat to taste. Used 2 cups chicken broth instead of 1 c water and this was still too thick for my taste, I ended up adding another 1/2 c water. Overall a good recipe. I look forward to making it again. Excellent leftover as well.

Butter Roast Chicken

I didn't cook this exactly according to the recipes, because the night I cooked this, my bf ended up running late. After the cooking time was done, I covered in foil and turned the oven down to 200. When he arrived almost an hour later, the chicken was so tender I had to slide a spoon under it to pick it up. We both loved it, the flavor was great. Even with my extra cooking time, this turned out moist. I did cut the butter as recommended by other reviewers.

Beer Bread I

I made this with Splenda for a Superbowl party. It was a hit, got a request for the recipe and the guests were fighting over who got to take the leftovers home. I only would have given it 4 stars without sugar, though. Since I had given it all away, I made a second loaf (with sugar this time) and it was MUCH better. 5 stars for sure. I have found that it helps to allow the bread to raise for 5 -10 mins and pouring some melted butter over top before baking, as suggested by some other reviewers. Can't wait to try it with cheese! Update: Gave the recipe to my boyfriend and he added an extra 1/2 can of beer because the batter looked too thick...the texture was great this way (with the cooking time increased a bit) but although the guys liked the stronger beer flavor, it was a little too strong for me. Tried adding some melted butter to the batter next time to thin it out a bit and it was great. Will try with milk or water added next time instead of butter to cut the fat.

Blueberry Salad

I really enjoyed this recipe. I put it in a graham cracker crust after it had cooled and set up some, and the crust did not get soggy at all. Only problem was that I read the recipe wrong and only used 1 box of jello. It had to set a long time, but got to be just a little looser than canned pie filling...can't wait to make it correctly!
