Key Lime Pie VII

Super easy to make and tasted better than any store bought key lime pie I've ever had. I live in Florida and have fresh key limes available, so the only change I made was that I fresh squeezed key lime's for the juice and used the zest from the key lime rather than from a regular lime.

Cocktail Meatballs

I made these just before Christmas so we could snack on it while making Christmas cookies. The kids were eating more meatballs than cookies! I doubled the recipe and it was still gone in less than 30 minutes.

Easy Roasted Pork

I thought this was perfect! My husband thought it was a little on the sweet side, but only because I served it with other "sweet" stuff and he doesn't like sweet at all. But he put a little soy sauce on his and said it was great. I tried some of his with the soy sauce and had to agree... even though I thought it was perfect to begin with, the soy sauce made it even better. I will definately make this again.

Bacon Wrapped Duck Breasts

I tweeked this a bit; first, we raise our own domestic ducks, and we enjoy the flavor of duck. So I don't soak the meat to remove any flavor from it, nor do I marinate it in anything. I use the other reviewer's suggestion of the jalepeno and it's a big hit. I simply lay out a piece of bacon (I use turkey bacon to cut out a little of the fat), lay a piece of duck on it, put a jalepeno in the center of the duck and roll it all up. I usually chop up some fresh veggies and bake the duck on top of the veggies. I've also grilled it the same way, except I wrapped it all up in foil to retain the moisture. It's been a huge hit every time!
