Carrot Cake III

Moist, tasty and easy. We even had it without frosting and peacans. This was my first carrot cake and I succeeded it!

Roast Pumpkin and Feta Risotto

Excellent, my toddlers loved it. I wanted them to move beyond pumpkin pie and this recipe made it. I used a mix of pumpin and squash, frozen spinach, no salt and peppar and a light broth to adapt to baby taste. It should be tagged kid-friendly recipe.

Chocolate Scotch Whiskey Cake

Formidable! I think the origin of the chocolate squares is not as important as the percent of cacao in them. Could be German or other as long as it is high. I used chocolate with 64% cacao. There's a problem though with the recipe converter: - 4.5 tablespoons of cake flour equals 67,5 grams (and not 40 gr).; - 2/3 cups ground almonds equals 80 grams (and not 95 gr).

Hearts of Palm Risotto

My toddlers loved it! I replaced, of course, the wine with more broth, and the broth was very light to avoid salt. A good way of making them eat hearts of palm, something unusual, and help them open up to a new taste.

Zucchini Bars

Excellent. I didn't dry the zucchini or diminish the oil, but I used less sugar for the frosting as other reviewers suggested. I used the wrong grating dish so the zucchini was not really grated but minced. Still the cake was superbe and the zucchini blended well in the batter.

Smothered Green Beans

Simply, quick, tasty and kid-friendly. The bacon looks watery though in the end, not like those in the picture. Perhaps the recipe omitted statin the bacon had to be withdrawn and re-added after beans are tender.

Banana Crumb Muffins

It's a good recipe -no question about it. However it's not because of an outstanding banana taste but because of the delicious crumb on top. Next time I'll try with 4 bananas instead.

Beet Surprise Cake

What could I replace the cocoa with? Any suggestion? I used 100% pure cocoa unsweetened (Van Houten) and everybody loved the cake, that's not the problem. The problem is that cocoa makes it resemble a chocolate cake -while it is not- and I cannot help but compare the taste. So I thought: if I find what to replace the cocoa with, I'll be fine. Otherwise, it's very moist and digestible.
