Espinacas con Garbanzos (Spinach with Garbanzo Beans)
I used dried garbanzos (soaked 8 hours/then cooked approximately 2 hours in chicken broth), fresh spinach, dash of lemon juice and fresh ground black pepper. It is SO delicious. Going into my regular menu rotation for sure.

Green Smoothie
Not sure if I qualify to rate this, since I changed the recipe... I was really doubtful that greens could actually be worked into a smoothie with tolerable results. I used a past prime peach w/skin, mango, frozen banana, 2 cups chopped kale and enough OJ to make it all blend. I think it's delicious. And I think nearly any fruit combo would work. I'm now a believer in green smoothies. :)

Oven Brown Rice
Made this for Sunday dinner - put it all together and set the oven on time bake. Cooked it covered, when we got home there was still some liquid in the rice, so uncovered it and cooked it about 15 minutes longer. Turned out perfect. Great way to have the healthiness of brown rice without having to wait 45 minutes while it cooks on stovetop. I doubled the recipe, and used all chicken broth rather than a combo of beef and chicken. Used garlic pwder rather than salt. Was liked by all at my table.
