Pumpkin French Toast Bake

This was amazing! I didn't make any chages to the recipe except adding an extra teaspon of sugar. For the topping, I used 3 tablespoons of butter and added approximately 1 cup of finely chopped pecans. It is delish served alone or amazing with a smidgen of maple syrup and a dollop of Extra Creamy Cool Whip. I placed the cubed bread into a 13x9 Pyrex dish and poured the puree on top and gently tossed with my hands; then sprinkled with the topping. My family is very picky and they loved, loved, loved this dish!

My family was excited about trying this recipe. Unfortunately, we thought it was flavorless. We didn't have any problems with texture as other reviewers mentioned, just lack of flavor. Sorry!

Garlic Cheese Chicken Rollups

Recipe went over very well with the family. I took a couple of liberties and dipped both sides in the butter and pressed cheese mixture down the entire center of the breast before rolling. Great, quick recipe!

Cinnamon Plum Jam

This recipe is great. We made with prune plums from a tree in our yard. We have tried with both skinned and unskinned. We prefer the unskinned. It gives it more color. Very YUMMY!

Pork Chops with Blue Cheese Gravy

Enchiladas

With just a couple of modifications, this recipe was amazing! In fact, I was surprised at how much I enjoyed this as I am not fan of ground beef in any type of mexican food. Use Hatch Brand Enchilada Sauce, it will make a huge difference! I used flash fried corn tortillas in place of the flour tortillas, added a couple of cloves of minced fresh garlic to the meat while it was cooking, added a couple of handfuls of sharp white cheddar to the meat and poured a little enchilada sauce into the drained meat, and topped with sharp cheddar, and a monterrey jack/cheddar mix. We served with dollops of sour cream and fresh chopped roma tomatoes. Wow! This is a new family favorite.
