Simple Scones

I've made this three times now in about as many weeks, and am quickly getting addicted. I don't have a food processer, and the grating was getting difficult until I started using my "Italian restaurant" cheese grater - the rotary kind where you hold a handle and turn a knob rather than holding onto the butter itself. It worked VERY well, especially when I cool the grater down in the freezer for a bit first (I keep reading about how keeping things cold is the secret to good scones).

Pineapple Enchiladas

As advised somewhere, I added chopped onions and green peppers to the filling, just to add some vegetables. The leftovers froze really well, and I think they actually taste better after letting the flavors mix a bit. The toaster oven is perfect for re-warming, since it keeps things a little bit crispy. Oh, and I have a co-worker who raves about how good they look and smell whenever I bring leftovers for lunch!

African Peanut Soup

Completely different than anything I've ever made, and I keep having to sneak another spoonful. This is really delicious--and a perfect Fridays-of-Lent alternative for us Catholics! I added some extra chili powder and some cinnamon, as suggested in one of the reviews, and pureed the finished product, as suggested in another. Delicious. Thanks!

Whole Wheat and Honey Pizza Dough

I never really trusted myself to make my own pizza crusts, but now I am SO glad I tried! I followed the link from the December '08 "Single Servings" column, which suggested making four baby pizzas out of this dough and freezing them. I baked the mini-crusts for five minutes, added sauce, cheese, and piles of veggies, wrapped them in plastic wrap and stacked them in a plastic freezer bag. When I'm ready to eat, I put one in the oven for about 20 minutes and it's perfect. So delicious. It's been wonderful to have homemade, healthy, on-demand frozen pizza. Next time I'll make more!

Mashed Sweet Potatoes

I cut back a little on the butter (about 1/4 c) and syrup (about 1/2 c) and added a whole bunch of cinnamon. When it comes to sweet potatoes, I've always preferred them simple and baked to desserty casserole style, so this simple recipe works well for me! For someone living alone, they keep well in the fridge as a side for various meals through the week.

Broiled Tilapia Parmesan

This was delicious so easy. I had never used the broiler on my oven before, and in my attempting to learn how, I accidentally locked my oven closed. So instead, I used the broiler on my toaster oven and it worked perfectly--much easier than working with the big oven, especially when I'm just cooking for myself!

Slow Cooker Lasagna

I used whole wheat regular noodles and found that I should have used many more of them - 8 hours on warm was definitely enough time to cook them. Also added red peppers and onions. Loved this, and it was pretty easy.

Slow Cooker Chicken and Dumplings

Perfect winter comfort food. I used chicken breast tenderloins because they were on sale, and they fell apart completely when I went to shred the chicken. I added some carrots and fresh parsley that I had in the fridge.

Exquisite Pizza Sauce

I followed the link to this recipe from the December '08 "Single Servings" column--made a few mini pizzas with the Whole Wheat and Honey Pizza Dough, topped with tons of veggies and then froze them. They're great to have in the freezer, and the flavor of this sauce worked really well with the rest of the pizza. I'm not usually a sauce fan, so I'm glad to have found one I like. Plus, it's really nice to have homemade pizza on demand now! Next time, I'll make more of them to freeze.

Asparagus and Mozzarella Stuffed Chicken Breasts

I loved this one. It wasn't too difficult, and all of the flavors were just incredible together. I did take some reviewers' suggestions to cover with cream of chicken soup and then sprinkle with breadcrumbs. This was delicious!

These are really delicious, and incredibly easy! I'm kind of a klutz when it comes to new recipes, and I hardly ever bake, so the fact that I had no problem making these and they turned out perfectly is a real testament to the recipe. Thanks for sharing!

Actually Delicious Turkey Burgers

This recipe is perfectly named. The only bread crumbs I had were "roasted garlic and spice," and I had to add quite a bit of extra to make the patties stay together. Delicious.

Pumpkin Turkey Chili

This is pretty good. One thing I tried, given the pumpkin, was to stir in some cinnamon when serving - I keep reading about the use of cinnamon in savory dishes. I think I like it better than I liked adding the sour cream and cheese! Really delicious.

Easy Baked Tilapia

This was nice and easy--a simple meal to scale when cooking for one! I made two fillets and still used a whole bag of stir fry veggies. I had a good dinner and the perfect sized lunch for the next day.

Roasted Brussels Sprouts

I've never eaten brussels sprouts before, so after reading some of the reviews I cut some in half and left others whole. The soft insides of the whole ones didn't bother or wow me. The ones that I'd cut in half had more of the carmelized flavor, and were easier to eat because of the smaller size, so in the future I'll probably cut them all in half. I also shook a clove's worth of minced garlic with the oil, salt, and pepper. I didn't have kosher salt, so I used regular, and it was fine, but given that some folks have sworn by the kosher, I'll try that in the future to see if I can taste the difference.

Mushroom Pork Chops

These are DELICIOUS! I followed the advice of reviewers who suggested including white wine in the soup mix, and I seasoned the pork chops with garlic salt and oregano. I doubled the soup, as some suggested, and ended up with a TON of sauce (as well as a mess on the stove from when it bubbled over a bit). So next time, I probably will just use one can, but it did give me some ideas for playing with mushroom soup recipes! Also, I used the Campbells Healthy Request soup for the low fat content, and the sauce was still very creamy and delicious.

Mom's Warm Milk

I didn't like the flecks of nutmeg floating around, and the taste was a little overpowering. But I love the idea of adding a little sugar and a little vanilla.
