Beer Cheese Soup III

Really loved this soup! Great flavors and a nice twist to vegetable soup. My only complaint is that I would have liked it to be a bit thicker, like a traditional beer soup. However, I hate making a roux so I'll take it! I used a brown ale, which was perfect. In looking up the best type of beer for soup, light beer was not recommended because it is too watery and not enough flavor and an IPA would be too bitter. My only adjustment was to use vegetable broth and a combination of cream of onion soup and cream of celery soup to make it vegetarian.

Fluffy Pancakes

These were just way too sour for me...I would like to try it with less vinegar next time. If you put lots of sugar/syrup on the pancakes they might be ok, but myself and the kids prefer them plain/dry and I didn't really like them without sugar to balance the sour taste out.

Incredibly Cheesy Turkey Meatloaf

I would give this a 5 but if made as is I think it would be bland...but then again I prefer my food with LOTS of spice, etc. I added onion, garlic, worst. sauce and pepper jack instead of colby : ) And as someone who has NEVER ate ketchup with meatloaf I added it to half and it is so much better that way!!!!

Chicken With Mushrooms

This is very good and I think could be made even more simple than as written. My only changes were to add 1/2 can of cream of mushroom soup in order to produce a bit more of a sauce and a good deal of seasoning, I think it would have been rather bland otherwise. One problem is that the cheese simply melted down into the sauce and did not distribute evenly. I'm not convinced that the breading step really adds anything. Next time I will simply add pounded ck. breasts to the pan and skip the breading and mix the cheese in with the sauce. This would make this a one pan meal. It just might require a bit longer of a cooking time.

Campbell's® Swiss Vegetable Casserole

A nice change from green bean casserole. I followed the directions other than using fresh vegetables that I steamed for 10 minutes and I may or may not have used the exact amount of cheese, I had some slices I needed to get rid of. Personally I would like it a bit more cheesy so I may add more next time, and steam the veggies for less time (or not at all) b/c they were a bit too squishy!

Fresh Asparagus Soup

Very good, but I think you have to like asparagus in order to enjoy the soup and get past the color/consistency! It really does look like a slightly thinned pea baby food! My only changes were to use regular 2% milk and sour cream in place of yogurt b/c I only had fruit flavored! Also, I had roasted the asparagus the night before for dinner and used the leftovers to make the soup, which was perfect : )

Seasoned Turkey Burgers

These are ok. I was looking for a flavorful recipe that is easy to prepare. I let these refrigerate overnight so I'm hoping that is where this recipe went wrong. When i cooked the burgers they kind of swelled up and got chewy almost : (

Tantalizing Turkey and Blue Cheese Meatballs

thank you for the recipe : ) These are good, but considering the # of ingredients I expected outstanding! I only used 1TB. of oil and I think that is why they stuck to the foil a bit before cooling. The oil is not needed, IMHO, if you grease the pan. The jalapeno and breadcrumbs and extra seasoning take away from the more pure turkey/blue cheese taste I think I was looking for!!

Baked Cheese Olives

I didn't think these were good enough to warrant the work. I didn't have any pimento olives so I tried both blue cheese and jalapeno stuffed. I added about a TB. of butter to make the dough a little easier to work with.

Carrot Cake V

This is a really good, moist recipe...BUT, I think using baby food as opposed to real carrots provides a WAY muted carrot flavor, so it was not what I was looking for : )

Cheese Fondue

I had a block of gruyere that I needed to use so fondue was an obvious choice. Other than adding minced garlic I followed the recipe exactly. I have to guess that a fondue pot is critical. I did this on the stovetop, patiently stirring in the cheese after about the third handful, I ended up with a lump of stringy cheese in a pot of wine. I used quality cheese, and a good whine. I was very frustrated and as a last ditch effort to save the dish we cranked up the heat and stirred vigorously, which did result in a very thick, somewhat stringy, but finally melted pan of cheese. I also tried the lemon juice trick, and it did not help. I read a lot of the reviews and I can't quite figure out why this works for some and not for others! In the future I'll save myself the frustration, for what I spent on the cheese, wine, and dip items the Melting Pot is much less expensive : ) Forgot to mention, this did taste good though!!

Salmon Puffs

These were really good. I used peppered smoked salmon and probably more like a tablespoon of garlic, but otherwise stuck to recipe. VERY rich, and VERY salty...Next time I think I'll try to make more "packets" to make smaller servings. They are pretty big made as is.

Butternut Squash Soup

Great way to use up excess squash, but it was a little bland IMO. Once it was finished I added garlic powder and a bit more cayenne, which I think helped. I would try this again with maybe some extra seasoning/spice. I did half the amount of cream cheese, I think it would have been the dominant flavor had I not

Mom's Zucchini Bread

Excellent! My first attempt at zucchini bread and I won't look for another recipe! My only change was to substitute applesauce for half of the oil to try and make it a tiny bit healthier : ) My only complaint is that I was surprised that 2 cups of grated zucchini only equaled one large zucchini, I had hoped to use up more of the excess I had on hand.

I really liked this, but of course with the changes I made...I doubled the zucchini, I was desperate to use a lot. I used croutons instead of bread and real garlic instead of garlic salt!

Zucchini Skins

The flavor and idea is really good...the turn-out not so much. The zucchini was pretty soggy. I would like to try it again with a much shorter boil time. Also, the breadcrumbs and sour cream just kind of came together in a paste that never changed in consistency through the cooking process. I think with some tweaking this could really work. As is I was left wanting a retry : )

Pesto Squash

If you like all the items individually this will be one of your favorites. I was hoping something more would come out of the combination! I think I'll just have to accept the fact that I'm not a huge squash fan and endure the endless amounts I get through my CSA : )

Grilled Salmon I

This was very good, but a tiny bit too sweet for me. I did not have lemon pepper on hand, so I think next time I will make sure to get the right seasoning, kick up the rest of the spices and cut down the sugar a tiny bit. A really great, fast marinade : ) Thanks!!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I needed to use a big bunch of (what I thought was) swiss chard. Once cooked, I actually think it was spinach. Regardless, this was really good. I did not have shallots, and added about 5 green onions, a whole can of garbanzo beans and a whole can of diced tomato. I could have easily used more greens because they cook down so much. I really liked this, the ingredients really go together well : )

Cheddar Cabbage Casserole

VERY good! I was looking for a way to use the abundance of cabbage we had. The cabbage flavor was very mild which could be good or bad, depending on what you're looking for. Very unique! Only had red cabbage, which we learned is not very different in taste. Now for the changes : ) I used about 6 cups of chopped cabbage. We did not have corn flakes so I subbed potato chips. I layered 1/2 in the bottom of the pan, then the rest of the ingredients mixed together, topped with a tiny bit of the cheese I had reserved and the rest of the chips. Since I used chips I thought a stick of butter would be too much, so I reduced it to 3 TBSP. in which I sauteed the onion and some garlic. This was mixed in with the cabbage and the rest of the ingredients.
