Unbelievable Chicken

I made this the night before and it was Very tasty. Omitted the garlic die to am intolerance and used thighs instead of breast and it was very good. Will definitely use it the next time I cook breast.

Coconut Lime Rice

I made this today for a big group as a last minute addition to my other potluck offerings for a family feast. I adjusted the rice for 12 people. Since I only had 3 cups of coconut milk I used a can of carnation evaporated and added coconut extract and a cup of reg milk with the extract. I had only 2 limes so I used some juice from concentrate as well because for 12 people I needed 6 limes. I also didn't have coconut oil so I used olive. It turned out awesome !! I just ate a bowl and I could forgo all the other dishes and just eat this for dinner ! The cilantro was the perfect addition

Chef John's Sunday Pasta Sauce

So this is how my mother in law taught me to make sauce. We brown the meat bones in the pot we cook the sauce in rather than in the oven. The brown bits are already there. The meatballs we do cook on a cookie sheet in the oven We also add a little vino. Red or white works . We eat it that day and freeze the leftovers in single meal containers or freezer bags .

Cream of Fresh Asparagus Soup II

I added a couple of medium potatoes and sautéed them with the asparagus . I also fried up some smoked bacon and added it to the blender . So good and for a finish I topped it with shredded Swiss cheese . Holy !!!! AmaZing

Low-Carb Mashed Cauliflower

I made these and they were awesome . Instead of using cream cheese I used sour cream and for liquid I used chicken stock. Another time I made them and added some fresh dill. I have also used them with ground turkey to make a healthier version of shepherds pie.

Crispy Cheese Twists

These were a huge hit. I only seasoned the one side not to overdo the flavour and they were perfect. The pastry came in 2 so I used one for this and the other I sprinkled with cinnamon and sugar for dessert . The family loved both of them and they were so quick and easy to make and made me look like a genius. I served with turkey pot pie. It was a pastry overload meal but so yummy!

Dad's Leftover Turkey Pot Pie

I made a version of this and my family loved it. Instead of making 2 Pies I made one big casserole in an 11x17 shallow roasting pan. I used 2 Crusts on the bottom and two on the top. I had 9 to feed. I didn't measure anything and opted to not add milk. a few tbsp of flour (4ish)and lots of butter to fry the onions and veggies in. For spice I did poultry seasoning , salt and ground pepper. Added 4 cups of stock and added potatoes . I

Mushroom Sauce Baked Pork Chops

Excellent and easy to make. I almost fully cooked pork and cooked potatoes for 5 min in microwave. Tossed potatoes in olive oil and roasted at 450 for fifteen minutes before adding the pork and sauce and reduced to 350. Cooked for 30 minutes covered then 15 uncovered I used fast fry boneless as we don't like thick chops Family loved it. My brother in law asked I send the recipe to his wife :) I also added sliced mushrooms and cooked with the onions. Served with homemade apple sauce and some left over blue cheese dressing made from scratch the night before . Will become a staple meal

Buffalo Chicken and Roasted Potato Casserole

Loved it!!! Used low fat cheese and turkey bacon. Will use regular cheeses next time though because low fat doesn't melt as nice and goes abut dry. Also made some homemade blue cheese dressing to accompany. Yummy! Sliced potatoes thin in rounds and microwaved for a few minutes to save bake time before I coated with hot sauce mixture. They baked with a crisp which I loved. Family really enjoyed it too! Will make again for sure
