Green Chicken Enchilada

Reviewed: Dec. 9, 2009
Loved this basic recipe. I too like to chop chic breast, saute with onion & garlic + mex spices I put some of the sauce & cheese inside the tortilla and then pour over the green sauce & then sprinkle dried cilantro & paprika on for color. I make two 9x13's & freeze one. Why make the mess and not make 2 batches :-}

Coq au Vin

Reviewed: Aug. 17, 2009
I made a rendition of this tonight. I looked it up to see what herbs went in. I browned white chicken tenders in butter/oliver oil. I coated them with herbs, parsley, rosemary, thyme all dried. I took them out after browning & put 1 carton of sliced mushrooms in & browned them. I took them out & added more herbs, a little butter, some garlic and 1 cup red wine. I let that simmer, added thickner. (flour & water) & added the cooked mushrooms The finally added the cooked chicken. It was awesome ( no veggies)

Monterey Chicken Fajitas

Reviewed: Jul. 13, 2009
I made this for my teenager & she loved it. I did omit the soup, like others. I added Roasted Garlic Salsa from Trader Joes at the end of the cooking process & it kinda carmelized which made it smokey & delish. I added the black beans after with a sprinkling of shredded cheese mmmm Karen

Chicken with Lemon-Caper Sauce

Reviewed: Jun. 30, 2009
WAY too much lemon! I made it twice today. First batch I saw the amtlemon juice and halved to 1/8. Still too much.I corrected that with wine & broth. the 2nd batch I halved it again & it was better BUT I will put less in next time as when it cooks down, it gets way too concentrated.. Other than that it was awesome, tender & everyone loved it.

Harvest Pumpkin Soup

Reviewed: Dec. 4, 2008
Love this pumpkin soup & have made it several times, changing it every time. I have used pumpkin in the can, in addition, have put in 2 pre-cooked skinned yams. I have sauteed fresh baby carrots & they gave the soup a zing. Yummy! Tonight for my community cooking club, I am going to try the spicy approach with the hot pepper flakes, topped with the sour creme dollop, some mint (for show) & a sprinkle of paprika for color.

Pumpkin Cake II

Reviewed: Nov. 30, 2008
My daughter & I made this the other day on the spur of the moment. We only had 1/2 box of yellow cake mix. I used 1/4 cup of Pumpkin Butter from Wm Sonoma. Used the whole can of pumpkin & also used a smaller amount of brown sugar. Baked 45 mins in Bundt pan. No frosting. Her husband LOVED this. I had it for breakfast & put it in the microwave for 15 sec & slathered it with butter. YUMMMM

Fruit Cocktail Salad

Reviewed: Nov. 28, 2008
The key to this salad is DRAINING the fruit overnight. I even kept it in the fridge w/o a covering. I just used 2 lg cans of fruit cocktail & 1 reg can of cut pineapple. I cup of sour creme & I added mini marshmellows to the top & it was scarfed up!!! Loved it.

Turkey Gumbo

Reviewed: Nov. 28, 2008
I am pretty sure that the oil measurement is wrong as well as the flour one. I made a roux tonight to add turkey stock to & all it took was 1 stick of butter & about 3 tablespoons of flour. I added about 6 cups of turkey stock, a little at a time, & ended up with about 5 cups of yummy gravy. I also added chic granules for clout & kitchen bouquet. have to be careful with KB as it is potent. My Grandmother used it. It is in all grocery stores.
