Bean Soup With Kale

Reviewed: Nov. 16, 2011
This is delicious! I had leftover kale from a different recipe and had to find a way to use it. What a way! What I did differently was to add a package of Italian chicken sausage, diced. I sauteed the sausage with the onions and garlic. Because the sausage took up a lot of space, it didn't look soupy enough, so I added an additional cup of broth. I didn't have fresh tomatoes on hand so I used a can of diced tomatoes (undrained) and only had one can of cannellini beans, so I used adzuki beans for the rest. I also followed the advice of another reviewer and simmered for 15 minutes uncovered followed by 20 minutes covered. I will be making this again and again. Huge hit here with my 4 kids who usually won't touch soup, let alone kale!

Easy Garlic Broiled Chicken

Reviewed: Sep. 2, 2011
I followed user audra's suggestion of using 1/2 the butter and baking then broiling and, let me tell you, there is no better chicken recipe I have found yet. I make this often, basically because my 4 sons and husband request this on a near weekly basis!! FANTASTIC!

excellent! Even my son, who detests quinoa, ate 2 servings! I didn't change a thing, and never would. It's perfect as written!

Venison Pot Roast

Reviewed: Jan. 8, 2010
I can't give this recipe 5 stars, but only because I didn't eat it (don't eat venison) but my husband and 4 sons loved it. There was absolutely none left over and they all said it was delicious.

Quick Cheeseburger Pie

Reviewed: Nov. 19, 2009
I have been making the Bisquick version for years, and that doesn't hold a candle to this one! The only changes I made from the recipe were the addition of about 1 TBS of Worcestershire sauce and a dash of garlic powder to the meat, and instead of using swiss cheese I used Land O' Lakes american slices, both shredded into the meat mixture and laid flat on top. Everyone in my family, myself included, loved this! Wish I had made two because it went so fast!

Enchiladas Suizas

Reviewed: Nov. 3, 2009
This recipe was incredible! I did make a few changes, but still kept close enough to the original recipe to rate it a perfect 5 stars! I used pre-packaged enchilada-size tortillas made with corn flour and didn't fry them, in an attempt to cut some fat, and found them to be soft enough out of the package. I added a bit more spice to the salsa verde: a heavy dash of each of the following: cumin, chili powder, garlic powder, as well as a small dash of cayenne pepper. I also minced 3 cloves of garlic instead of the one called for in the recipe. Instead of the two types of cheese, I used a Mexican blend of shredded cheese and a half cup of 1/2 & 1/2 as opposed to the full cup of heavy cream. I was only able to get 10 enchiladas into my pan, and all ten disappeared in a flash. LOVED IT!!!!

Oven Fried Chicken II

Reviewed: Oct. 19, 2009
Very moist and tasty. I used bone-in chicken thighs and the family loved it. I added some pepper and garlic salt to the flour and instead of using the oil in the pan, I added 3TBs of butter to the pan, put the pan in the oven just long enough to melt the butter, then added the chicken and cooked according to the directions. Adding it my recipe box because I'll definitely make this again!

Flourless Peanut Butter Cookies

Reviewed: Oct. 1, 2009
My husband was dying for cookies but I didn't want to make a lot and wanted to make them quickly so this seemed like the way to go. My cookies looked nothing like the picture. They came out so flat and wide they looked like pancakes, which made it difficult to remove them from the pan. They were super oily and just overall not so great. Maybe I just didn't cook them long enough? Not going to try this recipe again to find out. Will stick with the recipe with flour in it.

Banana Crumb Muffins

Incredible!! And even that description doesn't do this recipe justice!! I followed the suggestions by K.Lynn (except I completely forgot to add the egg...and it's still awesome!) and they came out so moist and extremely delicious. This is an absolute keeper!!

Mom's Zucchini Bread

Reviewed: Sep. 19, 2009
I make this every year without fail. After trying quite a few other recipes I have ditched them all since finding this one. Perfect taste, nice and moist and a huge hit my kids. I like to add ground flax seed to everything, so I use 2T ground flax and remove 2T of the flour and it still bakes up perfectly moist and yummy!

Kelsey's Cheesy Bacon Breasts

Reviewed: Sep. 19, 2009
Everyone in my family of 6, including a couple of very picky young boys and a husband who usually never eats chicken, loved this recipe. It was super easy and oh so yummy!!! Reminded me of my favorite Outback menu item. I did not saute the chicken before hand, but did partially cook the bacon before adding it and added the cheese during the last 10 minutes of cooking as suggested by other reviewers. A definite hit in this house!!

Easy Shake and Bake Chicken

Reviewed: Oct. 17, 2008
I made this tonight for dinner. I have 4 very-hard-to-please sons and one husband whose favorite saying is "Chicken....again?" Not tonight!! Even he loved it. And my 4 yr old, who never ever eats dinner, ate every last bit of chicken on his plate. I used boneless, skinless chicken breast and it came out super juicy and tasty. I doubled all the spices per others' reviews and added 2tsp of onion powder as well. Will definitely make again!!

Apple Crisp II

Reviewed: Oct. 16, 2008
I love this recipe! Since discovering it last week, I have made it 4 times and it never lasts more than a few hours. I did make a few minor changes though...I mix the sugar, flour and 1.5 tsp of apple pie spice (in place of the 1 tsp of cinnamon)and mix the apples in it instead of sprinkling it over. I also omitted the water. No need for it. I love the crumb topping so the first time I doubled the recipe, per some other reviewers advice and I thought it was incredible, but my family thought it to be too much crumb topping to apple filling ratio. So now I make it according to the recipe instead of doubling it. There is still plenty of topping and my family eats it up just as fast, if not faster!!
