Quinoa and Black Beans

This is deicious! I added red pepper and some hot sauce. Sadly, I didn't have any cilantro, I imagine that would only make it better! This is an easy, healthy dish that I will definitely make again.

Fruity Couscous Salad

I was so skeptical about this recipe. I am usually all about fresh fruit so I just didn't see how dried fruit and cumin was going to taste good. I am so glad I tried it, it tastes great! I wasn't able to find dried apricots so i used dried peaches and I used white grape raisins. The colours weren't as pretty but I loved it. I also squeezed an orange on top to moisten it. This is quick and easy, perfect!

Colorful Four Bean Salad

I had to make a few adjustments because I live in Argentina now and the food variety is not as great. I basically just picked 4 different types of beans, whatever I could get. I had to skipe the pimiento peppers too. I used red wine vinegar and less sugar and it still turned out really tasty! I don't eat much meat so this is a great way to get protein and a perfect summer dish.

Delicious Pumpkin Bread

I took some of the previous reviewer's suggestions, I doubled the cinnamon and nutmeg and substituted apple sauce for half the oil. I also used chopped almonds instead of raisins. The bread tastes delicious, I will definitely be making this again!

Vegetable Lo Mein Delight

There is just a little something missing from this that keeps it from tasting like the restaurant kind, but it was still delicious! It was really easy and my boyfriend and I really enjoyed it. I've made it twice now. It tastes great as a leftover just like take-out chinese.

Addictive Sweet Potato Burritos

These were really good! I took the advice of other reviewers and used black beans instead of kidney. I also mashed them before putting them in the pan, which seemed much easier. I'm giving this a 4 only because 2 cups of water is way too much! It was so runny I had to use a slotted spoon to save the actual bean mixture. Luckily it still turned out delicious. I even put the leftovers over chips (I ran out of tortillas) and it tasted great. I'll definitely make these again.

Shepherd's Pie Daddy's Way

This recipe is SUPER easy, but not that exciting which is why I gave it a 4. I added frozen corn and carrots on top of the meat and threw in some garlic. It was delicious and the leftovers were amazing!

Jeanie's Falafel

The only reason I am giving this a 4 is because I thought it was way too garlicy. I would suggest taking 1 or 2 cloves out of the mix. I has no problems with the falafel sticking, but I took other users' suggestions and made them flat like coins and baked them. This helped them stay together, made them healthier and they were easier to put into pita pockets. I put thousand island on them the first time and ate the leftovers cold with ketchup, great both ways!

Homemade Black Bean Veggie Burgers

These were pretty tasty! I absolutely hate peeling cloves of garlic though so I need to find a substitute for that. I baked these to make them healthier and they were delicious. The leftovers held well too!

Eggplant Parmesan II

This was really easy and delicious. I took some other reviewer's advice and cooked the eggplant for closer to 7 minutes on each side to make them crispier. I also added some oregano to the sauce. I made this for my boyfriend and he went back for seconds. I'll definitely make this again.

Pasta Bake

I sent this recipe to my boyfriend and he made it for me while I was at work. He said it was easy and it tasted delicious. We don't eat red meat so we substituted morningstar soy ground burger and it tasted just like the real thing and was healthier too.

Caramel Apple Bars III

These bars were delicious but a real pain to make! I had to use double the caramel that the recipe called for because the caramel hardened so quickly that I couldn't get it to spread across the apples. They also did not stay in bar form very well, but it tasted great over ice cream.

Pumpkin Spice Muffins

I was a little disappointed by these muffins, they were just a little blander than I expected them to be. They go well with some low-calorie cream cheese though. Maybe next time I'll add more cinnamon, nutmeg, and almond extract.
