Chipotle Shrimp Tacos

Wow. I made this with no bacon, sauce only from 1 can of chipotle, and 2lbs shrimp. I sauteed onion first then added shrimp. Served with avacado, lime, cilantro. Awesome and easy!

Unbelievable Chicken

I made this with white wine vinegar and Guldens mustard (all I had in). Came out very flavorful an my family really liked it a lot. Will make this again.

Real Hummus

Very, very good. I added an extra clove of garlic and a little more lemon. Used water instead of liquid from beans. Cumin is a good option too but good with or without.

Boilermaker Tailgate Chili

Very good as is or modified. I omitted sausage and used only 1 can of crushed tomato this time around and it came out great. Also added a few slices of turkey bacon for flavor and discarded when done cooking through. I usually simmer this for 3 hours + and add beans for the last hour of cooking.

Chicken Noodle Stir-Fry

Very good, healthy and fast weeknight recipe. My sons both liked it a lot. I doubled and skipped the flavor packets and used 1c chicken broth with cornstarch instead. Also added 1tsp chili paste with garlic and used snowpeas, shredded carrots, red pepper and sprouts for veggies.

Slow Cooker London Broil

This was very good. It tasted a little like a lazy osso buco. I used "healthy choices" tomato and mushroom soup. I sauteed onions and garlic instead of using the onion soup mix to cut down on salt. Will make again!
