Vegan Red Lentil Soup

This soup was a big hit with my family! I made a couple of small changes. I replaced the water with vegetable broth and doubled the amount. I added the entire can of tomato paste. I left out the fenugreek seeds. I put the soup in the blender after I cooked it and it came out velvety smooth. This one is a keeper! Thanks!

Black Bean and Salsa Soup

WOW...the reviews were so good on this one I had to try it! DELICIOUS!!! Quite possibly the best soup I've ever tasted! I took the advice of other reviews and changed a couple of things: 1. Keep one cup of beans whole 2. Add one can of Rotel instead of salsa 3. Add one cup of sauteed onions 4. Triple the amount of cumin 5. Add one teaspoon of garlic powder 6. Top soup with fresh sliced jalapeno & cilantro 7. Serve with corn muffins. This one is a keeper!!! :)

Blonde Brownies I

I wanted to love them but I didn't! They dried out quickly and they seem bland to me. Maybe I'm too much of a chocoholic to enjoy a blondie! :)

Best Marinara Sauce Yet

This is sooooo delicious! I use whole canned tomatoes. I squeeze out the excess juice and seeds before putting them in the food processor. I also add red pepper flakes in the food processor to give the sauce a kick. I don't add quite as much olive oil to the pan when cooking the onions. I use about 4 tablespoons. It's so yummy! Thanks for the recipe! :)

Grandma's Green Bean Casserole

I made this for our family Christmas get together. Not a spoonful left! So delicious! I made it exactly as stated in the recipe. Next time I will not add the teaspoon of salt because it was a bit too salty for me. I think the cheese and crackers add plenty of saltiness! I WILL make this again!

Brown Sugar Smokies

These were delicious! I did marinate them in the brown sugar for about 1 hour. Then is put them on a baking sheet covered with foil, sprinkled extra brown sugar on them and baked them for 45 minutes. Crispy and yummy! ***Do remove them immediately from the foil after baking or they stick!

Baked French Fries I

These were delicious and I will definitely need to double the recipe next time! I used a mandolin to cut my potatoes into rounds. Then I placed all of the ingredients into a large Ziploc bag, (I added 2 Tbs of olive oil instead of one), and shook it until the potatoes were evenly coated. You can play around with the seasonings to make them extra spicy, garlicky, with fresh dill, or whatever! I covered my baking sheets with foil and sprayed them with Pam to prevent sticking and make for easy clean up. I baked my potato rounds at 400 degrees for 20 minutes, flipped them over and cooked them another 20 minutes. Yummy!

Monkey Bread I

This was yummy and the kids loved it! It was so easy! I added half a cup of chopped pecans. The only reason I gave it 4 stars because it was too sugary for my taste. Nothing wrong with the recipe, just my personal taste! ;)

Broccoli Casserole I

This was so delicious and just as good the next day! I cut the recipe in half, used fresh steamed broccoli, cooked the rice in chicken broth, and used Velveeta in place of the cheese sauce as others suggested. I will be making this again!

Cucumber Sandwiches III

These were so simple to make and absolutely delicious! I did take the advice of some other reviews and cut down on the amount of Italian seasoning. Glad I did that...that stuff is potent! I also whipped up a batch using dried ranch mix...it was even better than the Italian...IMHO! It's also yummy on a toasted bagel!

Roasted Asparagus with Herbes de Provence

I served this delicious asparagus with Christmas dinner and it disappeared quickly...everyone absolutely LOVED it! I did as a couple of reviewers suggested and drizzled the olive oil over the asparagus on the baking sheet, then sprinkled with the spices so I didn't dirty up any extra dishes. Cooking time of 12 minutes was perfect! They came out crispy and yummy!. Even the kids loved them! I will definitely be making this again!

Buffalo Chicken Dip

I LOVE this dip and it always gets gobbled up at parties! I have a slightly different version. I shred two baked chicken breasts, add 4 oz. hot wing sauce, 4 oz. ranch dressing, 4 oz. blue cheese crumbles, 8 oz. cream cheese and 4 oz. of shredded cheddar. I reserve a bit of the cheddar to add to the top. I mix it all together, put it in a baking dish, top with remaining cheddar and bake for 30 minutes. I serve mine with tortilla chips. Yummy!

Scalloped Potatoes I

I really wanted to like these since the reviews were so good, however I didn't think they were very tasty. I really disliked the taste of the cheddar cheese soup. It tasted fake and processed to me. On the other hand my hubby liked them, thank goodness! The recipe makes a lot, so he's been eating them for days! ;)

Easy Lemon Cookies

These were so simple and yummy too! They even looked pretty! I did use some suggestions mentioned in the reviews I read. I used a yellow cake mix with lemon juice and a little lemon extract. I was careful not to make them too sour and it worked! I will definitely be making these again!

Fried Rice Restaurant Style

This was delicious! I used brown rice instead of white. I cooked the rice the day before in chicken broth so it had more flavor. I also added onions and some left over grilled chicken breasts that I chopped and threw in at the end.
