Whole Wheat, Oatmeal, and Banana Pancakes

My 11yo son found this recipe and made them for breakfast this morning. They were great and everyone loved them. I wasn't overseeing, but I know they must be easy enough that an 11yo can't mess up!

Goal-Line Chicken Salad

4 of my kids looked at it and said yuck, but then tried it and ate 3 big servings each. I chopped the chicken in the food processor so it didn't "look" as appealing as it would have diced. Using a G.Foreman grill made this a very quick lunch for us.

Parmesan Crusted Chicken

Tastey recipe. I used exact ingredients in recipe) but prepared a little differently because of lack of time. I rolled chicken in mayo and dipped them in mixture of parmesan and bread crumbs. I then cooked it on a george foreman grill. I've never tried anything breaded on my GF grill, but it turned out perfectly and took less than 10 minutes cook time! By the way, I used PANKO Italian seasoned bread crumbs which have a much better texture than regular bread crumbs.

Banana Peanut Butter Bread

Increased peanut butter & bananas, deleted walnuts. Next time I might try adding chopped peanuts to replace walnuts.

Blueberry Strata

Everyone absolutely loved it. I only used 1 pkg. of cream cheese and this was plenty. Other than that I only made 2 other non-significant changes. I used whole wheat sandwich bread since it was all I had. Also, for the syrup, I cut back the sugar and water to 1 1/4 cup. It was plenty sweet. I might add some vanilla to the egg mixture next time.

Chicken Breasts in Caper Cream Sauce

YUMMY! I doubled the sauce. Also, leftovers make an EXCELLENT soup. I served it with buttered fetticini, and "Daddy's Fried Corn & Onions" (from this sight). After dinner, I threw all the leftovers in a bowl, chopping the chicken first. The next day, I used butter, flour, chicken broth & milk to make a soup base, added the leftovers plus some chopped carrots.

Apple Dip

It's good but was a little too sweet for me ( I don't have a big sweet tooth). Very quick to make. I tossed my apples with just a little pineapple juice to keep them from browning. I would still make again if I needed to make something quickly for a party.

Restaurant-Style Potato Skins

Really good. Instead of frying, I sprayed the scooped potato skins with olive oil and cooked for ~10 minutes in the oven (450 degrees)to crisp. I then mixed salt, pepper, butter and a little cream cheese with the scooped mixture, added it to the skins, topped with bacon and cheese then cooked till cheese melted.

Tangy Glazed Chicken

Chicken produces so much liquid, so I didn't use the chicken broth at all. I still had to use a little cornstarch to thicken since I ran out of time. On a whim, and the suggestion of another reviewer, I added about 1 Tbsp of white wine. With leftovers, I cut up the chicken, stirred in cooked rice and took to a pot luck. Everyone loved it!

Salmon Cakes II

Nice recipe. After mixing the ingredients, discovered it definitely needs another egg as a binder. Also, followed the recipe on half of the patties and the other half I coated with parmesan instead of flour. These held together much better when transferring from plate to pan, but I didn't notice a big flavor difference. I actually didn't know which were which on the serving platter and couldn't easily identify a difference. Next time I'll try baking as others suggested.
