Scrumptious Salisbury Steak in Mushroom Gravy

Very simple, relatively quick and everybody enjoyed it. What more could you ask? I did use fresh baby bella mushrooms, otherwise made as written. Sauce/gravy thickened up beautifully and was well-seasoned (meaning, to my family's tastes). Really good recipe; thanks for sharing!

Buffalo Chicken Wings III

First time making my own wings. Read the reviews, followed the recipe... success! They were awesome! Great recipe, Walt. So easy to make. Next time I'll cut the wings apart for easier consumption, but that didn't diminish the flavor or simplicity at all. A new Superbowl staple is born at my house!

Easy Salsa Meatloaf

I doubled the recipe using ground turkey, and used fresh salsa in the mix with jarred chunky salsa as a glaze. I used a little extra bread crumbs and 3 eggs to try to avoid "mush" in the middle, and it worked. Also, baked at a higher temp (375) for 45 mins. Two loaves fed 4 adults and a teenager with about a half a loaf to spare. I would have been happier with a sauce/gravy, though, rather than just a glaze. Moist as it was, it felt like it was missing something, esp. with the mashed potatoes. Overall, tho', very tasty; nice change from the usual meatloaf fare and healthier, too. Will definitely make again! (Gravy suggestions welcome!)

Sweet And Sour Glazed Chicken

I made this for two with boneless pork chops and it was very good. Added an 8 oz can of crushed pineapple, a whole onion soup pkg, and just eyeballed the dressing and preserves (I used Smuckers). Served over rice made with chicken broth and we had no leftovers. I need to play with the bake time; 40 mins was a little long but my oven runs hot. This one's a keeper for sure.

Creamy Shrimp and Corn Stew in Shells

This is tasty and filling, and I'll make it again. The pastry shells were much smaller than I expected (first time I've used them), but since I was feeding only two of us, that wasn't a problem. I thought the sauce was a tad thick so I may thin it next time. But it's a good dish, and lends itself to customizing. Next time I will almost certainly crumble bacon on the top, and maybe throw in some mushrooms.

Peanut Butter, Mayonnaise, and Lettuce Sandwich

I'd actually give this 2.5 stars if that were an option. I love all of these ingredients so I thought I might love this sandwich, too. I followed suggestions of using crunchy PB, very crisp lettuce and fresh bread. I took the first bite hoping for a life-altering experience... and was disappointed. There was nothing offensive about the taste or texture, but there also wasn't anything extraordinary. It left me lukewarm. Hence the 2.5 stars. *shrug* Can't please everyone, I guess.

Dan's Favorite Chicken Sandwich

I made this using Perdue breaded chicken cutlets. I also used a couple of different types of sliced cheese that I had on hand, for my family's individual preferences. But the base flavors of chicken, BBQ, bacon and avocado were left intact and we each liked our slightly different version very much! Easily customizable. Good Saturday lunch.
